Bobotie from Boschendal Manor House

I have never had bobotie before, so I don't have anything to compare this dish to. I expected it to be sweet and complex in flavors and texture and that's exactly how it turned out. I used beef instead of lamb but everything else I followed exactly. I looked at some images of bobotie online and saw that most people decorated the top with bay leaves so I did that and also added some fo the almonds on top. We liked this dish. I made it with Indian Rice Pilaf from this site and it went well with it. When I make this again, I will get rid of the liquid that the meat rendered once it was cooked and before pouring the milk/egg mixture on top. It came out a bit watery because of that liquid.

Classic Macaroni Salad

I tripled the recipe for a picnic. I didn't add the carrots or pimento peppers. I used a combination of white vinegar and apple cider vinegar because I didn't have enough of the white. Worked great. Also, I ran out of regular mustard so I used dijon and again, worked great. Due to the reviews, I decided to play it safe and reduce the amount of sugar by half. Seemed perfect. I made it the night before and the flavors were great the next day. I didn't reserve any of the dressing for the next day but I do see where it would be nice for people who like creamier salad to add some at the last minute. However, I thought it was great regardless. I chopped all the veggies really small because I don't like having huge chunks of any particular thing stand out. The flavor distributes better in my opinion, when everything is chopped small.

Banana Split Smoothie

Surprisingly, it tastes just like banana split! I can taste each ingredient in every sip (except for the oatmeal and the chia seeds which only add texture and nutrition to the smoothie). I made the smoothie as written except my pineapple wasn't frozen. So, I added a few ice cubes. If your pineapple is not very sweet, that might throw the flavor off some and might require for you to add a sweetener (in which case I always use honey). Will make again.

Quinoa and Black Bean Bliss

REALLY good, healthy and filling. I did use chicken broth (low sodium/fat free) instead of water and red quinoa. Instead of fresh corn I used a can of sweet kernel corn. I made some fresh salsa with tomatoes, serrano peppers, red onion, cilantro and lime juice. We really enjoyed it.

Super easy. Very good. Next time I will probably reduce the fat by using half and half. I added vanilla extract because I didn't have vanilla beans. Great!

Anna's Custard Pie

I scaled this recipe down to half and made in a small springform pan. I used Chef John's pie crust recipe (excellent). I had to bake it for about 40 minutes though. 15 minutes is definitely not enough. I LOVE the flavor. It was very easy to do. It's almost like eating flan without the caramel and inside a pastry crust :o) Will make again

Coconut Chicken Stir Fry

I made this with only 2 chicken breasts but left everything else the same because I love sauce. I didn't have carrots but didn't miss them. Instead of vegetable oil I used coconut oil and ended up adding considerably more curry powder after tasting the dish at the end of the cooking time. To me, it needed more of it. I didn't take any stars out though because the recipe does say "or more to taste". It was great with basmati rice.

The Best Parmesan Chicken Bake

I followed this recipe just as written and I found the chicken to be too bland. It was tender, but didn't have much flavor. I'd season it with salt and pepper first. The croutons get really soggy in spots and it's really an off putting texture for me. My husband really love the dish though, so I will keep making it. I use thin sliced chicken breasts. They cook faster and it's a more appropriate serving size than an entire whole breast.

Easy Homemade Pie Crust

I have to get better at giving pie crusts a nice edge. Mine didn't look very pretty but that's my fault. This recipe was easy and really good. My food processor isn't big enough to hold the entire volume of this recipe so I had a few issues with that. Also, I bought salted butter by mistake. I was still happy with the flavor though because I was making a savory dish with the crust. In the future I will stick to unsalted butter, especially if making a pie.

Grilled Chocolate Sandwich

Very simple, easy and yummy. I made this as directed on the recipe and liked it very much but because I was making it for breakfast I decided to drizzle some maple syrup on it and eat it with a fork rather than as a sandwich. Another thing I tried and liked very much was using the Dark Chocolate Indulgence spread (by Kraft Philadelphia) instead of the chocolate chips. It is great either way.

Horchata Made Easy

Poppy Seed Tea Cakes

I cut the recipe in half and I got exactly 18 cookies. It was spot on. I didn't have unsalted butter so I used salted and it was great anyways. I will make these again and try with unsalted to see which way I prefer them. These are buttery, crumbly, not too sweet, easy to make, beautiful to look at... a winner!

Chia Pudding

My husband is a firm believer of the "powers" of chia seeds so, I had some laying around and I tried this. To me, it needs more sugar and vanilla in it. I didn't have raisins so I added a few mini chocolate chips with the coconut. That helped a lot.

I'd say this recipe makes a good standard-tasting large batch of crepes. The batter is not too thin or too thick and the flavor is easily tweakable (Ok, customizable).

Broken Spaghetti Risotto

Even though I have loved every single one of Chef John's recipes I have tried thus far, this one seemed too simple to be really "all that good" and the few negative reviews had me thinking I would have had to spice this up quite a bit. I was WRONG!! I only had linguine so I broke those up and other than that I didn't change a thing. This was SO very good. I didn't even had to add salt!!! I just kept adding a little broth at a time until it cooked down to the way I liked it. I sprinkled the red pepper flakes and freshly grated Parmigiano-Reggiano on top and voila!! If you think you can get away with putting the fake cheap stuff on top, nope! It sure won't be the same. This was great. I can see it being served at any Italian restaurant with some chicken and veggies on the side. I had it by itself because I'm "carbing up" for a long run tomorrow ;o)
