Slow Cooker Pernil Pork

I've made this 4 times already. I follow the recipe as written and the result is a very flavorful and tender pork that my friends love and request when we have a get together coming up. I'm not a fan of the slow cooker but it works well enough. Having said that... I think this recipe is second best to a traditional puertorican pernil where the main ingredients are tons of garlic, adobo, oregano, white vinegar and onions.

Easy Fried Spinach

Great with less oil.I also turned off skillet after cooking pressed garlic, dumped the spinach in and covered it. Perfect!!

Tiny Pecan Tarts

MMM! I didn't want a bunch of these, just enough for 3 people. So, I scaled it down to 6 servings. I ended up making twice the dough because I had leftover filling. No need to grease the pan, they came out so easily and so beautiful and so tasty...and they were SO easy to make too!!

Delicious! I used Granny Smith cut in half horizontally, wrapped up in premade dough. Followed recipe and it is perfect!! (served warm with vanilla bean ice cream of course) MMMMM

Wonderful! I used peaches, raspberries and blueberries. Eat it warm with vanilla bean ice cream and it is PERFECT! A keeper!

Cedar Plank Salmon

I love cedar plank salmon. Didn't have a plank so...I baked this in foil packets in the oven. In my opinion, a good quality salmon should not be dressed up with such strong flavors. It was good a good flavor combination but somewhat overpowering.

Easy. Delicious. Very pretty too. Used 1/4c light brown sugar and 1/2c white sugar. Added 1t vanilla extract. Of course, make sure your fruit is ripe, sweet and delicious. That's the key.

I liked the idea. Turns out very moist but I couldn't resist basting it with a honey/brown sugar/butter/ground cloves mixture after the first 2 hours of baking.

Delicious! However, I rather pour in the butter.sugar mixture over the apples than over the lattice crust. I did add a pinch of allspice and about 1 tsp cinnamon and 1 tsp vanilla to the butter/sugar mix. Excellent!

Strawberry Jam

Way easy and delicious. Of course, it depends a LOT on the quality of the strawberries. Because this is SO easy to prepare I make it fresh every time I need some. Sometimes I add a little bit of diluted cornstarch to help thicken it up.

This was just "ok". The tomatoes were overpowering and the bay scallops were lost in the dish. I would decrease the amount of tomatoes and use sea scallops instead.

Corn Fritters

I didn't even know about these until my coworker Melissa mentioned them one day. I cut all the ingredients by half but I did increase the sugar to 1/8 of a cup (1/4 cup for the original recipe) and it definitely needed it. I sprinkled confectioner's sugar on top and voila!! Another one of those "turn-a-healthy-thing-into-a-heart-attack-but-you'll-die-happy" thing.

Vanilla Crepes

MMM!! I love crepes filled with sliced bananas, caramel and pecans. I drizzle some more caramel on top and sprinkle a few chopped nuts and VOILA! Who needs IHOP when you have recipes like this!!
