Garlic Red Potatoes

I bought small red potatoes and cut them in 1/8, and STILL had to cook them for an hour. I used fresh parmesan and more garlic. They were delicious!

Cranberry Hootycreeks

Perfect recipe as written. I didn't want these for gifts, I just wanted a good cranberry and white chocolate chip cookie and these were SO it!! I made them quite large using 1/4 cup for each cookie so I had to bake about 11 minutes.

Grilled Tilapia with Mango Salsa

I made these with a mixture of mango AND strawberries. Loved the marinade. I broiled the tilapia 4 min per side. Super easy and VERY delicious!

Ropa Vieja in a Slow Cooker

Delicious and flavorful. A word of advice for those who are not crazy about peppers- this dish tastes A LOT like peppers. Cut down some if you prefer, you will be ok. I added 5 fresh garlic cloves minced and 1 whole can of tomato paste (and I regretted doing that, 1/2 can is definitely better in my opinion)

Easy OREO Truffles

Super Easy and relatively fast (I did freeze before dipping and used a spoon and a fork for the process). Sprinkled some with chopped pecans and decorated some with white chocolate strips. To do the strips: Put a few (about 20 chips)white chocolate chips in a ziploc bag and push them all the way to one corner. Microwave 30 seconds at a time until they melt, squeeshing with your fingers everytime. Snip off the corner (not too small or the bag will pop when you squeeze it) and using fast side by side movements draw lines on top of the truffles. Drawback: TOO RICH! OMG!! Even without chocolate on top!!

Stuffed Peppers My Way

I sauteed some minced garlic (about 3 cloves) on the olive oil before adding the rest of the ingredients. Otherwise, I followed the instructions completely and I liked the dish very much.

Baked Havarti Chicken

Used plain Havarti and fresh garlic. I liked the dish overall. Chicken was moist and flavorful. Liked the chilis on top and the havarti... Mushrooms were ok. Might make it again some day.

This recipe is basically about the rice and it is too sweet and too vinegary. I did not like the taste or texture of this rice. I rolled them inside out because to me they look prettier that way. They looked gorgeous but I did not like the rice taste!

Manicotti Alla Romana

Filling was SO bland. White sauce was bland as well but I fixed it by adding mozarella cheese to it. It melted beautifully in the sauce and it gave it a lot of flavor and character. I will make again but I'm making the spinach and beef filling my old way.

Toooooooo sugary!! I toasted the almonds in the oven for a few minutes, that worked great. The amount of sugar needs to be cut down big time in my opinion. Otherwise, really good and refreshing salad.

Country Apple Dumplings

I halved the recipe, added pecans and (because I absolutely hate Mountain Dew) I used Ginger Ale. I think the soda part of this recipe can be subbed with just about any drink. Was super EASY and very tasty served warm with a big ol' scoop of vanilla bean ice cream.

BBQ NY Strip

Soooo good! I used McCormick's Montreal Steak Seasoning. I sub red wine vinegar for Sherry Vinegar and cooked them on a skillet by pan searing them for about 2 min on each side then lowering temp until done(about 6-8 minutes for medium well)

I also used chicken broth instead of buillion and slit a pocket on the chicken breasts rather than pounding them. I served it over plain couscous and the dish looked pretty and tasted wonderful.

One of the best things I've had in my life! I used mango and cilantro and scaled down the recipe for just 2 servings. It was beautiful and tasted heavenly. So refreshing and light yet so flavorful.

I scaled the recipe down to 12 "cookies". I used the Solo brand Apricot filling and it didn't ooze and tasted wonderfully. I had some issues with the dough sticking to the counter but I dusted confectioner's sugar and that helped a lot. I used a round cookie cutter, spread filling in the middle and then folded in the sides. See my pictures. I think they came out pretty and they were really tasty!!

Flan II

Didn't care for it much. I've made plenty of flans before (I'm puertorican, this is a staple dessert down there) and this one is so-so. Adding hot milk to eggs is not such a great idea either. You have to be really careful or you'll end up cooking the eggs with the hot milk. Caramel is the easiest thing to do. Use the microwave!!! Add some water to the sugar in a glass container and heat it up in high for a few minutes (until you see it turn that beautiful amber color). Have done it countless times that way, believe me.
