Charley's Slow Cooker Mexican Style Meat

Reviewed: Jan. 12, 2010
I only had a 1.41 pounder so I decided to cut everything in half, except the chiles which I used 1 small can, and the hot sauce which I used only 2 ounces. I also added 1/4 teaspoon cumin as recommended by many. I cooked it on high for 5 hours, shredding it after 4 hours and it was super tender and very flavorful. It was spicy... in the verge of being too spicy for me (but I'm a wimp, it was fine).

Smilejenna's Lumpia Sauce

Reviewed: Jan. 10, 2010
Very good. Adjust garlic and red pepper flakes to taste. I added almost twice as much red pepper flakes and only made half the recipe. A keeper.

Simple Maple Syrup

Reviewed: Dec. 30, 2009
It definitely needed color and thickness. The suggested 1/2 brown sugar 1/2 white sugar worked better for color and boiling the syrup for a few minutes helped it get thicker. Also good with vanilla extract in place of the maple syrup for a nice twist.

Krumkake II

Reviewed: Dec. 15, 2009
Delicious! I saw a Krumkake iron on Amazon.com for less than $40. It is electric, very easy to use, and makes pretty designs on the krumkakes.

Soooo delicious! Can't wait to try them with dried apricots. I halved the recipe but otherwise didn't change a thing! A keeper for sure!

Blackberry Cobbler II

Reviewed: Dec. 14, 2009
MMM, WoW!! Very delicious! I reduced the amount of sugar on both the dough and the filling based on most reviewers and completely agree. I might reduce it even more next time. Of course, the amount of sugar will depend on the sweetness of your berries too so go ahead and taste your berries first and determine for yourself. This cobbler is truly delicious!

Onion Rice

Reviewed: Dec. 7, 2009
A can of broth has almost 2 cups but not quite so I added water to make up for it rather than opening another can of broth for just a little liquid. I recommend a LARGE onion. Seems like a lot but it is not. I served this with blackened tilapia and avocado slices. A nice twist rather than plain ol' white rice.

Red Potato Bites

Reviewed: Dec. 6, 2009
Really good and easy. I used gourmet klondike red potatoes. They are really tiny so you can imagine how cute these looked. Before you fill the red potatoes taste the filling to make sure it has enough salt and it has the consistency you like. I added a bit of butter and used a hand held mixer to whip the potatoes. Add a tiny dollop of sour cream on top and some chopped up chives and MMM!

Fudge Puddles

Reviewed: Nov. 24, 2009
Easy and delicious! I had left over fudge for probably 10-15 more "puddles". I omitted the pecans because I was also making pecan tassies and wanted something completely different from that. So... I used autumn colored sprinkles. I have no patience for double boilers so I used the microwave 20 seconds at a time. Stir, 20 more seconds, stir... until melted. Doesn't take long at all. The fudge sets quite rapidly so I had to reheat (about 15 seconds in microwave) every now and then. I used a plastic bottle (Wilton brand sells 2 for $2 at Walmart) to squeeze the fudge in the cups. I guess you could also use a ziploc bag and just cut the tip (one of the corners) off and use that as a piping baggie. Quite delicious!

Sopapilla Cheesecake Pie

Reviewed: Nov. 21, 2009
I halved the recipe and made 3 small round cheesecakes with it. I liked it very much overall but I think it is too sweet. I love honey but adding it made the dessert WAY to sweet. Next time I will reduce the amount of sugar used as topping and maybe I will also reduce the amount used on the filling.

Chicken Enchiladas V

Reviewed: Nov. 16, 2009
Yum!! I doubled the soup and sour cream as suggested by many and used chipotle taco seasoning instead of chili powder to season the chicken which I shredded after boiling for about 1 1/2 hrs. Will make again. Thanks!

Pico De Gallo

Reviewed: Nov. 16, 2009
Avocado (aguacate) does NOT go in pico de gallo. Of course, people can do whatever they want with a recipe. Add chocolate if you want, it won't be authentic but if you are into it... go ahead. Lime, however, DOES go. Garlic ... I rather press a garlic clove into the pico de gallo than using garlic powder. Green onion ... again, not authentic but I don't see why I'd hurt anything. This recipe is good but it is missing the lime and I always skip the salt for health reasons. It really doesn't need it anyways.

Baked Zucchini Chips

Reviewed: Nov. 13, 2009
The breadcrumb mix can use some more seasoning... like garlic powder and onion powder...maybe more parmesan. These are good though. I like that they are baked and not fried but still taste nice and crunchy. I served them with a garlicky mayoketchup dip that is very popular in PR (basically equal parts of mayo and ketchup with a pressed garlic clove or garlic powder mixed in).

Tomato Chicken Parmesan

Reviewed: Nov. 12, 2009
Stupid me thought that I had parmesan in the fridge and guess what... I had used it all. SO...lazy me didn't go to the store and just skipped the parmesan. Yep, chicken parmesan WITHOUT the parmesan. A sin. Forgive me. Instead of Monterey I used shredded mozarella. I pounded the chicken thin and added twice as much sauce because we LOVE sauce. Served it with spagetti ... Yum Yum. It turned out pretty awesome. Of course, with parmesan (like it is supposed to be) would be even better. Quick, easy and flavorful = I'm happy.

Homestyle Potato Chips

Reviewed: Nov. 10, 2009
Great! I don't like them too crispy so I cut them with a regular kitchen knife rather than a mandolin or the food processor blade. I reserve the salt for right after frying and I use sea salt. Delicious!

Quick and Easy Alfredo Sauce

Reviewed: Nov. 7, 2009
Very good and easy. However, I like to use fresh pressed garlic instead of garlic powder. I sautee it with the butter. I added shrimp to the sauce at the end and then stirred in some cooked penne pasta. Yummy.

Excellent!! I didn't add any black pepper because I forgot but it didn't really need it. MMMM! Easy and delicious! (Made it as a side dish for Maple Salmon which is OUT OF THIS WORLD, by the way)
