Flan de Coco (Coconut Flan)

My favorite coconut flan is the one on this site by Milly Suazo (Coconut Cheese Flan). However, that one calls for cream cheese and I was making a flan for a friend who doesn't care much about cream cheese. So, I decided to give this one a try. I wanted the coconut flavor to be noticeable so I did as many suggested and replaced the evaporated milk with a 14 oz can of lite coconut milk and omitted the extra regular milk. The flan came out good but I wasn't wowed by it. Everyone else seemed to enjoy it a lot. I think the coconut flavor didn't stand out as much as it could have. Also, flans are made in a water bath, please don't skip that step. I've made hundreds of flans over the years and for the last 15 years I have always made the caramel in the microwave. Put the sugar and some water in a Pyrex cup and heat on high for 10-15 minutes until it turns amber. Handle with care. You can use that same caramel to make decorations for the flan. Wait until it starts to harden a bit and drizzle it on top of parchment paper. When it dries up (in a minute or two) you can lift up the decoration and use it to top the flan once you have flipped it and it's ready to be served.

Perfect Pulled Pork

Very moist pulled pork, perfect for a crowd because it is not too spicy (though it does have a bit of a kick) and the flavors are not too strong. It is a good pulled pork to serve with your favorite BBQ sauce. I like Sweet Baby Ray's or Maull's. Would make again!

Hudson's Baked Tilapia with Dill Sauce

The Cajun seasoning alone was good enough for us. We cooked the tilapia on a skillet with a bit of olive oil. The dill sauce was good but I added more lemon juice and more dill because I didn't like the mayo aftertaste it had.

Baked Flan

I'm very pleased with how this flan turned out. I had half of a condensed milk can laying around in the refrigerator so I decided to make this and cut everything in half. Well, I used 3 eggs. I am used to making my caramel in the microwave oven. It is SO simple to do it that way. The only thing you have to do is keep an eye on it so it doesn't burn. It will take 10-15 minutes or so depending on the power of your microwave. I put sugar and a bit of water in a pyrex measuring cup and heat it on full power until it turns amber. Very simple.

Bacon Ranch Chicken Skewers

Ridiculously easy and OH SO GOOD! I didn't have chile paste but I did have chili sauce (Sriracha) so I squeezed some in there and it worked great. I skipped the salt and pepper, not necessary. I loved them and my son loved them (he is REALLY picky). I don't have a grill but these worked very well stove-top on a grill pan I have. I'll be making these for Memorial Day and for game nights! Thanks, Chef John!

Blackberry Soup

I wasn't crazy about the taste of the spices in the soup. Next time I will leave them out. Other than that, this was delicious and easy to make. I don't mind the seeds but if I was making this for company I would definitely take them out. I cut up some bread in tiny squares, heated some butter on a skillet and toasted the bread squares on it. Then I sprinkled some sugar and cinnamon on them and heated just enough for the sugar to caramelize a bit. I used those as croutons for the soup. It was a nice crunchy addition.

Filipino Lumpia

I like to use all pork and sometimes add chopped cooked shrimp at the end. I also like to season the mixture with salt, pepper, garlic powder and a bit of soy sauce. Shredded cabbage is good in this as well as chopped scallions. To dip, I like to make a sauce of equal parts brown sugar and water boiled down with a bit of cornstarch to thicken and then seasoned with garlic powder and red pepper flakes.

Fancy Pancakes

I make crepes all the time. I have several recipes that I tend to make more than others because they combine both a nice flavor and a good consistency and yield for the whole family. As far as taste alone goes, these are the best I have ever done. However, they were very VERY fragile and therefore, difficult to handle. I broke about 4 of them and I was being careful. Also, I don't feel very good about eating them (my conscience has issues with this recipe) because of the heavy cream in them. I'd make them again but not if I'm feeding a lot of people or if I don't have enough time to dedicate to them. Of course, I could try again and see if maybe I did something wrong that would fix that little problem I had.

Mock Caviar

This was good and easy to make. I only made half of the recipe as it yields quite a bit and it was only for me to snack on. It didn't blow me away but I did eat it all up with corn chips and I could actually see this served over crostini as well. I really don't like the name of the recipe though. Mock Caviar?? Why? Because it is mostly black? Not all caviar is black and it definitely tastes nowhere near. I'd rather call it Olive Salsa as it is called in the description and more people might be willing to give it a try. Oh well. Like I said, good over all but not something out of this world (at least for my taste).

Turkey Avocado Panini

Perfectly delicious! If you are tired of the same ol' sandwich, give this panini a try. I didn't press mine much because I prefer the vegetables raw. I did enough so that I got the pretty grill lines on my bread and the cheese melted just a tad. I served these with sweet potato fries.

Peanut Butter Banana Smoothie

This was perfectly delicious. We are really into almond butter and almond milk lately so I subbed those for the milk and peanut butter. I had it for breakfast and was very satisfied with it. Though I did use the honey, it might not even be necessary. The little sip I took before adding the honey was really great as well. Thanks for sharing!

Pineapple Salsa

We loved this salsa over orange roughy. I didn't have jalapeno peppers, used lime juice instead of lemon and added diced jicama for crunch. It was great.

Blueberry Pie Pops

Very yummy and fairly easy. Though I was feeling a bit lazy so I didn't form the cups. I made them flat. By making the cups you'd get more filling which would have been better. They looked really pretty anyways.

Fried Ice Cream

I enjoy fried ice cream very much. It is one of my favorite desserts. Although this recipe is very similar to what you would get at a Mexican restaurant, I've found a way to make this dessert without frying it and with much more flavor. In a medium heat skillet, I combine 1/4 cup butter, 1/3 cup flaked sweetened coconut, 1/3 cup chopped pecans, 2 tablespoons brown sugar, 1/2 teaspoon ground cinnamon and 1/2 cup flour. I stir everything until crumbly and golden brown. Then, I let it all cool down. I make the ice cream balls and roll them in the crumbly mixture and put them in the freezer covered until ready to serve. Then, I drizzle them with honey. I think this way is easier and has a lot more flavor.

Smooth Sweet Tea

Excellent!! I made it with Rooibos South African tea, which I love hot. Since it is getting so hot out now I figured I'd try it cold. This recipe worked perfectly as is. No changes at all. Thanks for sharing!
