Spicy Black Bean Empanadas

Reviewed: Dec. 28, 2011
I made these as part of a Halloween feast that was zombie themed. (they were made into "intestines", gross!) But despite their intentional gross appearance, they were a delicious hit that didn't last long! I've made them several times since then in a more conventional shape ;)

Easy OREO Truffles

I make these drizzled with white chocolate. I also make this recipe with nutter butter cookies dipped in white chocolate and drizzled with milk chocolate for Christmas gifts every year. They're always a huge hit and look so nice!

Spaghetti with Garlic and Basil

Reviewed: Jul. 21, 2011
This was really really good! I followed some other reviewers and made a couple of changes, but the simplicity and ease of this dish can't be beat! First, I sauteed some seasoned chicken breasts in olive oil and set them aside. Then I used the natural juices and leftover olive oil in the pan to lightly saute garlic, basil (don't skimp, it's a perfect amount), red pepper flakes, salt and pepper. Then I added a little white wine, put hot noodles in the pan sprinkled with parmesan, and stirred well to coat every noodle. Excellent, easy, and I've already made it twice! Thanks for the recipe.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

Reviewed: Jun. 7, 2011
Mmmm... this was sooo good! After reading other reviews, I decided to try another sauce all-together. I also used cod (my store didn't have any halibut), and used dried dill (also, my store was out). The fish worked out very nicely and the dill substitution worked out alright, but I know if I used fresh dill it would have knocked it out of the park. Overall, this was a fantastic, impressive, and EASY recipe. Thanks!

Risotto with Asparagus

Reviewed: May 13, 2011
I can't believe I've never tried to make risotto before this! Very good recipe. I was surprised how much flavor came out of such limited ingredients. I followed other reviewers suggestions and added 1 extra cup of broth and a clove of garlic to the sautéing onions. So delicious, even my rice-hating husband cleaned his plate! Thanks!

Chinese Chicken Fried Rice II

Reviewed: May 12, 2011
Very very good! This tasted just as good as any fried rice from a restaurant, and was super simple to make. I added some green onion for color (and because I just happened to have some that needed to be used up), and added a little extra soy sauce and used 2 eggs instead of just one. Delicious and easy!

Cajun Chicken Pasta

Reviewed: May 4, 2011
Very good! It reminds me of a dish that would be served at a restaurant. Oh, and it was quick AND easy! I followed other reviewer's suggestions and used fat-free 1/2 & 1/2 mixed with a little cornstarch and frozen peppers. I also seasoned chicken tenderloins that I pounded thin with homemade Cajun seasoning from this site, and cooked stovetop on my grill pan. It looked beautiful and tasted even better!

Enchiladas - New Mexico Style

Reviewed: Apr. 8, 2011
Mmmm, these were fantastic! I've never tried eggs on enchiladas before this, but I'll definitely be eating them again! I used Hatch brand red enchilada sauce, and it tasted pretty good. Thanks!

Buffalo Chicken Fingers

Reviewed: Jan. 7, 2011
These were great! They came out VERY spicy (which I like) and crispy out of the oven. I tossed mine in some Franks Buffalo sauce after they were done cooking too. Just as good if not better than the finest pub food I've ever tasted! Thanks!

Emily's Famous Hash Browns

Outstanding! Although they're more like potato pancakes than hashbrowns. We really loved these and definitely will be making them again!

Campbell's Kitchen Creamy Pasta Primavera

Reviewed: Apr. 23, 2010
This was pretty tasty! The only changes I made were to use fresh veggies (carrots, broccoli, zucchini) that I briefly blanched then added at the very end. We also sauteed a couple of chicken breasts and added to the sauce. Easy, quick and yummy!

Black Beans with Pico de Gallo

Reviewed: Apr. 2, 2010
The beans were okay, but they weren't really anything to write home about (but worth trying and easy to make). The pico was what really stood out for me. O-U-T-S-T-A-N-D-I-N-G. I know that pico de gallo seems really simple to make, but I've been unable to find a recipe that tasted anything like the pico from my favorite mexican restaurant here in Austin until now. The only thing I did different was to use white wine vinegar since we were out of balsamic.

Thai Beef Noodle Salad

Reviewed: Mar. 12, 2010
I thought there was way too much soy sauce in this recipe. It overpowered all the other flavors of the dish. Sounded interesting, but I'm going to have to pass on this one. Sorry.

Chicken Spaghetti II

Reviewed: Oct. 2, 2009
This was pretty tasty! After reading reviews, I too cut the cheese back to 1/2 a pound (light velveeta), and I think it could still use a little less. And don't get me wrong, I LOVE cheese! Still, a very enjoyable comfort food. Next time, I think I might try it with cream of mushroom soup instead. It just felt like that mushroom flavor was missing.

Slow-Cooked German Short Ribs

Reviewed: Oct. 1, 2009
While I liked the flavor of the sauce (it was great over mashed potatoes), the ribs were too over cooked for my taste. After stewing for 8 hours, it was difficult to tell the good meat from the fatty stuff. Might make again with a different kind of rib, and cook for less time.

Smothered Hamburger Steak

Reviewed: Sep. 22, 2009
This recipe probably won't blow anyone's mind, but it's still pretty good for how simple and quick it was to make. The only different thing I did was to add half of a beef bouillon cube to the sauce mixture. The gravy is great over mashed potatoes with green beans on the side. I'm sure we'll be having this quickie dinner again, thanks!

Delicious Chicken Casserole

Reviewed: Aug. 20, 2009
Good and simple meal for a weeknight dinner. I also added an extra cup of rice, shredded cheddar, and some frozen mixed veggies. I didn't add the butter to the crumbs, probably good, but didn't think it would be worth all the extra calories. Very good, even my casserole-hating boyfriend liked it and cleaned his plate. Thanks!

Fried Dill Pickles

Reviewed: Jul. 10, 2009
Numnumnumnumnum!!! These were excellent (and I've had a few fried pickles in my lifetime!). The batter stuck nicely to the pickles, which is a problem we've had in the past with other recipes. We used Claussen pickles and sliced them a little (just a smidge) thicker than your normal pre-sliced pickles. I would recommend after dipping in the egg mixture then the flour, wait about 20 minutes or so, then dust with a little more flour. We also tried this batter with some jalapeno slivers (even better than the pickles I think). We'll be making these often, thanks!

Baked Ziti IV

Reviewed: May 17, 2009
OMG! This was fantastic! I made a few minor changes... first, I used a homemade pasta sauce instead of a jar ("Best Marinara Sauce Yet"- yummy! also from this site), and I added a little fresh oregano and fresh basil to the meat mixture. My boyfriend flipped over this meal!

Fish Tacos

Reviewed: May 3, 2009
Pretty good, like others have said, the sauce was the real superstar here. The only change I made was to use sour cream instead of yogurt because that's what I had on hand. I did have some problems with the batter not sticking, but I think that was an error on our part... we don't fry a lot and didn't know what we're doing. Will probably make the sauce again and serve over grilled fish next time! *UPDATE* I've made these a few more times since then, and I've just been making frozen beer battered fish fillets. We didn't miss the taste or hassle of breading and frying our own fish. Once again, the sauce is a-m-a-z-i-n-g, give it a try!
