For those looking for that extra zing, I added a tablespoon of apple cider vineger and it really helped. I have learned to use vineger when recipes are lacking that tang you crave.

I halved the butter & used chives because it was what I had on hand, bit a week later my Hubby is still talking about it. Will definitely put this on the rotation. So simple but so delicious.

Beer Pancakes

I doubled this recipe and substituted Splenda for the sugar and used George Killians Irish Red. The end result looked good, but they had a very bitter taste and were awful. My son who puts syrup on hot dogs wouldn't even eat them! I substitute Splenda all the time so I don't think that was it and I find the Red has a sweet flavor on it's own. I may try diet cola if I'm in a pinch and out of milk, but never again beer!

Summer Potato Salad

Excellant recipe! My new potato salad recipe. I did tweek it a bit and added dill, oregano, garlic pepper grinder,fresh ground black pepper, and chives instead of the green onion. I also used 3 Lg baking potatoes which I nuked for 10 min then peeled and diced. I also used 3 eggs. Ialso just stuck the diced potatoes and eggs in the freezer in a metal mixing bowl while I whipped up the dressing. It tasted great immediately.

Flourless Peanut Butter Cookies

Just made these, added vanilla and mini semi-sweet chocalate chips. My family agrees the best peanut butter cookie recipe yet. Also I baked them for 12 min after flattening them with a fork and allowed them to cool on the sheet for 5 min. They turned out picture perfect.

Curried Coconut Chicken

This was my first try at curry and my last. It smelled great, unfortunately we can still smell it the next day, and the aroma made my 17 year old vegatarian retch.It was edible, I guess we just don't care for curry.Otherwise as far as recipes go, it turned out good since I followed some suggestions of the other reviewers.
