I scaled this recipe for 12 people and served it this Memorial Day to 6 people, and there were NO leftovers. I served with homemade spanish rice, tortilla chips and homemade pico de gallo. This was one of the most delicious and flavorful dishes I have ever made. I bought all mild ingredients and added my 1 spoonful of my pico de gallo and own dried spices before simmering (cumin, cilantro, cayenne pepper, salt and pepper). I also used 1/2 colby cheese and 1/2 american/pepper jack mix (I ran out of colby) and cut the tortillas into strips before overlapping in the dish. I also used a 9 x 13 dish as suggested in reviews for 12 servings. One of my guests had 4 servings! Thank you so much... I will be making this again.
