About this Cook
My favorite things to cook
Arroz con Pollo, Cassoulet, Chicken Vesuvio, grilled fish
My favorite family cooking traditions
Southern regional cuisine by birth, Mexican by association
My cooking tragedies
Making coq au vin in the middle of a kitchen redecoration several years ago: we were about halfway through stripping the wall paper and there was some loose wall paper behind the cooktop. For some reason, I chose that day to be the first time I didn't skip the "add brandy and ignite" step in my recipe. Didn't really expect the flame to go quite so high.

Harvest Rice Dish
This was really delicious. I rehydrated the cranberries in white wine earlier in the day. The oven temperature stated for toasting the almonds is a little high. Next time, I'll reduce it to 275.

Easy Tilapia
Tasty and very easy. I was tempted to reduce the butter but don't--you need the full 3 tbs. to balance the capers. I would only note that you need to judge the quantity of capers carefully as there are several varieties.
