Lime-Curry Tofu Stir-Fry
Really good. I did sub one Tbsp of fish sauce for one of the Tbsp of soy as some others suggested. My zucchini had gone bad so I subbed in some broccoli instead and it was good that way. Thought I'd note that it also was great with a side of pineapple. Next time I'll try the zucchini and add some scallions... and perhaps a bit more basil.

Turkey Shepherd's Pie
I really enjoyed this.. but still feel like it was missing a little something. My DH absolutely loved it. I followed the recipe almost exactly... except I used fresh mushrooms...I added milk to the mashed potato... and added just a bit of frozen peas to the mix. I think next time I might use more carrots and chop them instead of shredding. Perhaps I'll add a bit of chicken stock to the potato as well.

Chicken and Dumplings III
was very good. I only had one can of cream of chicken soup... so I used that. I also used other's suggestions and cooked the chicken in broth, carrot, onion, celery and two cloves of garlic. Kept all the broth and added my one can of soup... with lots of fresh ground pepper. My DH loved it!
