Avocado Shrimp Ceviche-Estillo Sarita

Mine did not "cook" enough in 6 hours, so I simmered the seafood just a couple minutes on the stove, chilled and continued as directed. Fabulous! I used 1 lb each bay scallops and shrimp, and also added 2 diced jalapenos instead of hot sauce.

Oatmeal Pancake

I am thrilled to have found this one! Blend it very well to avoid lumps. I omit the nutmeg due to personal taste, and add a packet of sweetener. I've made it both with egg whites or two whole eggs, can't tell any difference. I love' em!

Old-World Cabbage Soup

Fantastic! I added a little extra-lean beef, and it reminded me of cabbage rolls, minus the work! I changed the liquids somewhat: 5 cups beef broth plus one little can tomato paste. (No diced tomatoes, V8, vegetable or chicken broth)I highly recommend this change if you'd like to reduce the number of ingredients. It was great, I'll make it many times again!

Shrimp and Veggie Stew

Delicious! I used only the jalapeno peppers, no banana peppers. I added 1 green bell pepper, dash garlic powder, and 10 oz frozen peas (had them hanging around) and omitted the squash, though I'm sure it would be great. Awesome!
