Risotto with Tomato, Corn and Basil

This was really good. I could eat it several times a week. The only suggestion I have is to be careful of how much liquid you add to the risotto. If I would have put all the remaining liquid in the risotto like the recipe suggested, I would have had risotto soup. After 15 minutes start tasting it to see how close you are getting to the correct consistency. The add the remaining liquid as necessary. I almost forgot...I substituted chicken broth for the water for additional flavor.

Sweet Dinner Rolls

Here's what I did...I added 1 tsp. of granulated garlic to the dough mixture. After that, I followed other reviewers idea of dividing the dough into 36 pieces and putting three pieces into each section of a muffin tin. I then allowed the dough to rise a final time in the tin. After rising, I brushed the rolls with butter and sprinkled each one with granulated garlic, parmesan cheese, salt, pepper, and dried parsley. After baking, I again brushed the rolls with melted butter. I took these to a potluck and people raved over them and were amazed that I made them myself. Amazing!

Apple Strudel Muffins

Mmmmm...so good. I grated all of my apples, so there aren't any chunks in my muffins. It took about 6 small apples to get 1 1/2 cups. I also did 1 cup whole wheat flour and 1 cup all purpose flour. I took other reviewers suggestions of adding 1 tsp. of cinnamon to the batter and doing half brown sugar, half white sugar.

German Apple Cake I

Zucchini Brownies

I'm always looking for ways to sneak veggies into my picking eating family. (I'm not saying these are healthy due to the zucchini, but certainly better than a traditional recipe.) I was worried that you would be able to see the green from the zucchini, so I used a super-fine grater and after baking the zucchini was visually undetectable. I also added the zucchini to the wet ingredients, otherwise it would have been too dry to mix properly. These turned out very moist and delicious. Thanks for a great recipe.

Bananas Foster Monkey Bread

This was good, but very sweet. We all enjoyed it, but could only eat a few pieces due to the overly sweet factor. I'm glad that I took another reviewers suggestion of putting a pan underneith, because this bubbled over in the oven and made a big mess.

Slow-Cooker Chicken Tortilla Soup

The soup was wonderful. I had a problem with the tortilla strips. 10 minutes in the oven was way too long. They were completely burnt. I made a second batch and 4 minutes was perfect. It probably depends on the size/brand of tortillas that you are using.

Cream Cheese Squares

So good. I decreased the melted butter by half and still had plenty to cover the entire surface of pan. I also didn't use all of the cinnamon sugar mixture and didn't think it lost anything. We preferred eating these cold instead of right out of the oven.

Burrito Pie

This tasted really good. The only problem I had was that I followed another reviewer's suggestion of putting it in a spring-form pan so that it would look pretty. As soon as I tried to cut it, the meat mixture oozed out everywhere and made a huge mess. Luckily my family didn't mind it's appearance since it tasted so good.

Chocolate Caramel Brownies

This is my favorite brownie recipe. I actually think these are better after about two days. By that time the caramel has really asborbed into brownie making it super soft and gooey. Yum!

Upside-Down Apple Pecan Pie

I just made this as a test run to see if it was good enough to be served at Thanksgiving. I'm not a huge apple or pecan pie fan, so I wasn't expecting much. This was the best apple/pecan pie I've ever had. I think I ate half the pie myself. I can't wait till Thanksgiving to make it again!!

Extreme Banana Nut Bread 'EBNB'

I was concerned about the amount of butter in this bread, so I substituted 1/2 cup of pureed cauliflower for one stick of butter. Sounds strange...I know, but I try and sneak in veggies whenever I can. The bread was delicious. You would never know that I had made the change.

Barbie's Tuna Salad

Hmmmm...this was an interesting one. I was really nervous when I first combined all of the ingredients. I wasn't sure if all of the flavors were going to work together, and it kind of smelled funny. But as I starting eating the salad, it started to grow on me. I would eat this again, but it won't become a staple at our house.
