Risotto with Tomato, Corn and Basil
This was really good. I could eat it several times a week. The only suggestion I have is to be careful of how much liquid you add to the risotto. If I would have put all the remaining liquid in the risotto like the recipe suggested, I would have had risotto soup. After 15 minutes start tasting it to see how close you are getting to the correct consistency. The add the remaining liquid as necessary. I almost forgot...I substituted chicken broth for the water for additional flavor.

Sweet Dinner Rolls
Here's what I did...I added 1 tsp. of granulated garlic to the dough mixture. After that, I followed other reviewers idea of dividing the dough into 36 pieces and putting three pieces into each section of a muffin tin. I then allowed the dough to rise a final time in the tin. After rising, I brushed the rolls with butter and sprinkled each one with granulated garlic, parmesan cheese, salt, pepper, and dried parsley. After baking, I again brushed the rolls with melted butter. I took these to a potluck and people raved over them and were amazed that I made them myself. Amazing!

Apple Strudel Muffins
Mmmmm...so good. I grated all of my apples, so there aren't any chunks in my muffins. It took about 6 small apples to get 1 1/2 cups. I also did 1 cup whole wheat flour and 1 cup all purpose flour. I took other reviewers suggestions of adding 1 tsp. of cinnamon to the batter and doing half brown sugar, half white sugar.
