My Amish Friend's Caramel Corn

Make this all the time! So so easy and the entire batch is usually gone in less than an hour! I have to double the recipe now just so it will make it until the next day. Every time someone new tastes it I have to give them the recipe so I printed about a dozen and keep them in my kitchen drawer. The only thing I do differently is I use air popped popcorn. I tried it with stove popped and microwave and its just not as light and crunchy PLUS you save a lot of fat & calories this way. A LOT! So you can eat more lol.

Maria's Mexican Rice

O.K. so it usually annoys me when people review a recipe when they haven't followed it but... I had to. This rice is awesome! And thats without the onion & chili pepper. Didn't have it but really wanted mexican rice to go with my shredded chicken tacos. I have made dozens of recipes for this kind of rice and never liked any of them. This one is light & fluffy and flavored just right. Like my favorite mexican restaurant. I can't wait to try it with the onion & peppers! Just try it. Its sooooo easy!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

Da Bomb! Didn't have some chili flakes or oregano so added powdered garlic and dried parsley to taste. couldn't find zester so I just squeezed some fresh lemon juice on top after plating it. A few of us put parmesan on top and one even used Tapatio hot sauce! The next day when I heated up the little bit of leftovers I added cubed avocado. Double BOMB!

Strawberry Rhubarb Sauce

I was so excited to make this as Rhubarb and Strawberries were on sale this but this was very disappointing. I have made rhubarb sauce many times with only a little water and sugar and I love it but the addition of the Tapioca made it so sticky and thick. I had to soak the dish I microwaved it in for hours. Way too thick. I will stick my old recipe.

Surprise South Beach Mashed 'Potatoes'

WOW! Fantastic. I have been on low carb for about 3 weeks now and it's been preet easy until today. I needed comfort food and I was starving. I bought cauliflower today and was looking for something besides just steaming it and adding alot of butter spray and salt. Lets face it, cauliflower is pretty bland. Anyway, I was already cooking it when I found this recipe. I hate measuring so I did what I always do and just threw the ingredients in the food processor and hoped for the best. Awesome!! Of course I added some stuff. Instead of butter spray, which I usually use but is one reason I am doing low carb so I can eat BUTTER and CHEESE, helloooo, anyway I am rambling. I added 2 tbl. of butter and 2 oz of sharp cheddar. Also about 1 T. finely diced onion. YUMMY. I wish I had more!

White Chocolate, Chocolate Cookies

My chocoholic daughter came home from golfing and smelled these cookies as soon as she walked in. She quickly ate 2 of them and declared them as "decadent". We both think that they remind us of brownies. A little crackly on the outside and chewy inside. As with any cookie a few minutes either way could change the texture. I had to bake mine 14 min. Also,they looked like they were from a bakery. My cookies never look like that. These stayed high and fat. MMMMMMMMMMMMM
