This was JUST what I was looking for when I had leftover white rice (cooked) and leftover green beans from the night before! I tweaked this recipe based on what I had in the cupboard. Instead of peas I used the green beans, instead of potato chips, I used french fried onions! I also reduced the amount of mayo to 1 cup vs. 1.5 cups. It turned out AWESOME! I thought of it as a "suped-up" green bean casserole that I usually have at Thanksgiving! Thanks, Frances!
