Fun and easy. I think I'll try it with peanut butter instead of frosting next time.

Quinoa with Chickpeas and Tomatoes

Reviewed: Aug. 29, 2011
It would be good as a side salad. I added spinach and onion but it still seemed to be missing something.

I used garlic powder instead of garlic salt since other reviewers said it was too salty.

Mini Cheesecakes I

Reviewed: Aug. 27, 2011
I followed someone else's suggestions and did the following. I used oreo crumbs instead of wafers. i mixed all the batter and i omitted vanilla extract. whn the batter was smooth i separated it into 2 bowls. to one bowl i added 1 tbl of creme de menthe and green food coloring, to the other bowl i added 1 tbl bailey's irish cream. i baked them for exactly 15 mins i took tem out right away. They're small and if you over cook them their creamy texture will disappear! I used 1 cup of the choc cookie crumbs to which i added 2 tbls melted butter. ALSO: leave your cream cheese out of the fridge for a good 4 hours before you start or slightly microwave. Use a MIXER...blend and blend and blend..mix all the cream cheese up until its super silky, THEN add the sugar, THEN after that add each egg one at a time. Don't just plop it all in together.

White Chocolate Raspberry Cheesecake

Reviewed: Jun. 10, 2011
I used 1 c. crushed shortbread cookies and chopped toasted almonds instead of chocolate crumbs for the crust. I also omitted the half and half and added 2/3 c. sour cream to the batter with the vanilla. Make sure the cream cheese is softened and slightly warm so the white chocolate doesn't harden too fast. I also followed the suggestion of putting the pan on a cookie sheet with water during baking.

Bean with Bacon

Reviewed: Mar. 13, 2011
VERY GOOD! I used 3 cans of great northern beans and only 1/3 lb of bacon. With the bacon, I sauteed the onions and some chopped carrots. I also added chicken broth instead of the water and no salt.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Mar. 11, 2011
This was great and so easy! I put a frozen chuck roast in the crockpot in the morning on low and turned it on high for the last hour of cooking. I didn't have chile peppers so I used jalepena peppers. I also added corn and black beans. Next time I'll make yellow rice with it. I added cumin and not as much hot sauce.

Very tasty. After reading another review, I cut the recipe in half and it made a small loaf. I think next time I'll make 2/3 of the recipe.

Onion Roasted Sweet Potatoes

Reviewed: Jan. 29, 2011
Yummy! To avoid the burned onion soup mix taste, I precooked the sweet potatoes with the skin on and pierced for 7 minutes in the microwave. I then followed the rest of the recipe as directed and baked them for only 30 minutes.
