Caramel Apple Coffee Cake

I took another reviewer's advice and sprinkled a mixture of sugar and cinnamon halfway thru to create that spicy ribbon as well as adding 1 tsp. cinnamon to the batter. I only used 1/2 of the caramel over the top and subbed 1/2 c. applesauce for 1/2 c veg oil. I also used 4 macintosh apples.

This is a great crockpot recipe. I made it in the morning. Let it cool a little, transported it to the home we were eating at and cooked them on low for about 2 hours.

Mini Cheesecakes I

I followed someone else's suggestions and did the following. I used oreo crumbs instead of wafers. i mixed all the batter and i omitted vanilla extract. whn the batter was smooth i separated it into 2 bowls. to one bowl i added 1 tbl of creme de menthe and green food coloring, to the other bowl i added 1 tbl bailey's irish cream. i baked them for exactly 15 mins i took tem out right away. They're small and if you over cook them their creamy texture will disappear! I used 1 cup of the choc cookie crumbs to which i added 2 tbls melted butter. ALSO: leave your cream cheese out of the fridge for a good 4 hours before you start or slightly microwave. Use a MIXER...blend and blend and blend..mix all the cream cheese up until its super silky, THEN add the sugar, THEN after that add each egg one at a time. Don't just plop it all in together.

White Chocolate Raspberry Cheesecake

I used 1 c. crushed shortbread cookies and chopped toasted almonds instead of chocolate crumbs for the crust. I also omitted the half and half and added 2/3 c. sour cream to the batter with the vanilla. Make sure the cream cheese is softened and slightly warm so the white chocolate doesn't harden too fast. I also followed the suggestion of putting the pan on a cookie sheet with water during baking.
