Southern Moon Pies

I've made these many times and everyone always raves. I've tried doubling the filling but it makes them too sweet for my taste. To make them picture perfect, I put the filling in a zip lock bag, cut off a corner and pipe a circle on each half being careful not to get too close to the edge. This way you can see the filling without it getting everywhere. This also cuts down on the amount of filling helping to keep the sweetness in check.

Best Lemonade Ever

Crazy good, crazy simple. Not too tart and not too sweet. You can cut down on the wait time by chilling the pan of simple syrup in an ice bath.

Peanut Butter Bars I

The first time I made these, they were to die for. The second time, not so much. The second time I used cheaper ingredients so don't make that mistake. I portioned these out and wrapped individually before keeping them in the fridge (they get really soft at room temperature).

Quinoa Tabbouleh

I loved this even though I made it my own just a tad. :) I cooked the quinoa in chicken broth, used half cilantro for the parsley and added a bit of feta. Yum!!!

Boston Iced Tea

BBQ Pork for Sandwiches

So easy and so delicious. This is the such a nice dish to make for a crowd because everyone loves it. Use the best quality BBQ sauce you find (or make your own). I also serve extra BBQ sauce with it for those that like it really saucy.

Too Much Chocolate Cake

Hands down, the best chocolate cake I've ever had. I loved the picture posted so I baked the cake in a Bundt pan and once it cooled, I heated chocolate frosting in the microwave (at 15 second intervals) until it was warm enough to pour. Then I slowly poured the icing all along the rim of the cake and it oozed down the sides, shiny and beautiful. Thank you for this wonderful recipe!

Aunt Norma's Rhubarb Muffins

These made 12 gorgeous muffins with an excellent texture and taste. The tart bite from the rhubarb is the best part. I didn't have buttermilk so I mixed two teaspoons of vinegar into one cup of 2% milk. I also used two stalks of rhubarb and they measured out to two cups instead of the 1 1/2 listed. I get the feeling this recipe would be great with a combination of rhubarb and fruit too. Excellent recipe!
