I used lemon cake mix instead of orange, and substituted fresh lime juice for the lemon juice. As soon as the cake came out of the oven (still hot and in the pan) I poked a few holes in it with a wooden skewer and poured a shot of tequila over the cake. I added more confectioners sugar to the glaze to make it thicker, and waited until it was almost cool to glaze it, so it was more of a glaze on top instead of soaking into the cake. I took it to a cinco de mayo party and everyone loved it!

Peppermint Chocolate Fudge

I made this for Christmas gifts and it was very easy and very delicious. I doubled the recipe and took it to work but it was gone so fast I made another batch the next night. I used a little more peppermint extract than the recipe called for and to keep the crushed candy canes from melting and falling off the top I gently pressed them down into the fudge while it was still warm.

Pumpkin Gingerbread

I was making this to give to coworkers for Christmas gifts so I baked it in mini loaf pans. It made 8 mini loaves but I had to cut the baking time down to about 45 min. And I was out of allspice and ginger so I just added a little extra cinnamon and cloves. Everyone that tried this bread loved it and most people asked me for the recipe. I will definatly make this again.
