Rich and Delicious Banana Bread

This is the first time I've made an eggless banana bread that didn't taste like baking soda! Thank goodness. My son has severe egg and milk allergies, and I don't like to use shortening so I used a salt-free margarine, and an extra banana in a 9X5 glass bread pan. Added some milk free chocolate chips and it came out great. I did have to cook it for an extra 20 minutes.

Chocolate Chip Cookie Bars

I made the recipe as stated, but used a salt-free margarine. I wanted a cookie I could give my son who is allergic to dairy and eggs. The bars tasted good, but had a sort of grainy texture. I think that is part of the problem for other reviewers, too... I beat the dough for an extra few minutes to try to get it smoother. I think I may try using some honey in place of some of the brown sugar the next time I make these to add a little moisture to the dough so it holds together better. Also, I used a 13X9 glass pan and cooked them at 325F for 25 mins.

Rainbow Cookies

If you're looking for an easy and fast way to make delicious yet impressive cookies, this is it! When I baked the layers, I did one layer at a time... I had to resist eating each layer before the next one came out of the oven! :)

Picnic Potato Salad

Although I accidentally overcooked the potatoes (ended up like mashed potatoes,) they still tasted delicious with the dressing. I'm glad to have an alternative to the common bbq potato salad. Now, my food allergic son can eat some, too.

Penne a la Vodka II

I've made this twice already (using the adjustments that 'Lizard' made-used crushed tomatoes and 3/4 pint of cream) and love it! It's perfect and I'm going to make about 5lbs for my daughter's bday celebration, too! Thanks for the great recipe!

Carrot Cake III

I don't eat carrot cake, but I made this for Father's Day and everyone loved it. One person told me it was the best carrot cake he's ever eaten. I gave it five stars for the simplicity of making it. I followed the recipe almost exactly. I used walnuts instead of pecans and I didn't add them to the icing, but topped the cake with them. Lastly, I baked it in a springform pan so I had to cook it an extra 20 minutes.

Cretons

This made my house smell soo delicious! I'm not sure if the texture is right (it is pretty crumbly) never having eaten it before, but it tastes great. My children were even saying how good it smelled. I should add that I left out the bread crumbs (by accident) and I added cinnamon to the start because a different recipe used it and I love cinnamon. I plan on making this again and think maybe the bread will give it a more spreadable consistancy.

Scandinavian Almond Puff

I made this for my father-in-law's birthday because he's not a fan of traditional cake. It looked and smelled delicious! All of my in-laws loved it, but it wasn't sweet enough for me at all (that's why it only got 4 stars). Also, mine didn't come out in a marzipan texture like another review mentioned, so perhaps I over cooked it.

Gingerbread Boys And Girls

These cookies tasted great! Definitely not for making gingerbread Houses - the pieces come out so soft and chewy (YUM) and they'd likely crumble with the weight of candy and icing on them. I only made 2 changes: I accidentally spilled the cinnamon (with the help of children :D) in the dough, but it turned out to be perfect! I also added 1 Tbsp of ginger instead of 1 tsp. They came out really soft and chewy. I only gave 4 stars though because even though I refrigerated the dough and used wax paper, the dough was still terrible to work with. I gave up trying to use cookie cutters (couldn't remove the dough from the edges because it would stick to everything - the kids were disappointed) and ended up just enjoying it as a big glob! :)

Jo Jo's Favorite Banana Muffins

I made these muffins exactly as the recipe called-no modifications. They have a nice mild banana flavor. I used 2 med/lar. very ripe bananas (measured out to 1 cup.) I was concerned that they would taste strong of cinnamon because it smelled so strong cooking, but I can actually barely taste it. I only cooked the muffins for 25 minutes, but still, they were a tad over-cooked. My oven doesn't normally run hot, but cool, so I was surprised. Otherwise, I was very satisfied with this recipe.

Strawberry Coffee Cake

This recipe was very easy and quick to whip up. I prefer a little bit of a sweeter cake but I made it as a last minute dessert because my in-laws were over for dinner. They loved it, so I can't complain.

Buttery Soft Pretzels

These pretzels are very tasty. If I'd let them cook for the full 8 minutes, though, they'd have been badly burned. That resulted in some parts (where the dough was overlapped for the nice pretzel shape) coming out a bit underdone, but still edible. Next time I'll have to adjust the temperature.

Yellow Cake

The cake didn't rise properly so the presentation wasn't good so I gave it 4 stars. I had to improvise a bit and ended up using soymilk in place of orange juice and orange extract in place of vanilla. The changes went over well-it had a great flavor and there wasn't any leftover!

Healthy Banana Cookies

I let my 3 year old help me make these. She had a great time, as did I. The cookies, though, came out quite rubbery, but still had a great flavor! We used VERY ripe bananas, applesauce instead of oil, put in raisins instead of dates and added a bit of cinnamon.
