Vegetable Beef Chunky Soup

This was a great basic recipe. I made some small changes and the soup turned out very well. I switched to Spicy V8 juice and added a cup of cheap red wine. I also added a teaspoon of chopped garlic while browning the meat, two small bay leaves, and a sprinkling of powdered sage & cayenne pepper.

Cranberry Relish with Grand Marnier® and Pecans

This was a huge hit. I didn't have fresh ginger, so I subbed a couple shakes of powdered ginger instead. I also forgot to toast the pecans and just added them raw. Still turned out fabulous. My first time making cranberry sauce from scratch, and it was a breeze.

Pineapple Casserole II

This is a family favorite that pairs especially well with ham. The recipe I have from my mom differs just slight--I use pineapple tidbits instead of chunks, 5 tbsp flour, 1.5 cups cheese, and just 1 stick of butter. These instructions also don't specify what the butter is used for--I pour it over the Ritz crackers. My mom mixes the crackers with the butter and then spreads that over the top. Either way works, but I find it difficult to spread the butter-cracker mixture as it's kind of clumpy. I also don't divide the cooking time--it all gets put together and cooked at the same time, included the cracker topping.

Green Beans with Hazelnuts and Lemon

I found the recipe to be rather bland. It wasn't bad, but there wasn't much flavor aside from the green beans themselves. I added the juice from half a lemon, and it still didn't make a difference.

Slow Cooker Stuffing

This is my go-to recipe. I've made it multiple times, and it's turned out great each time. I leave off the poultry seasoning & mushrooms because I hate both of those things (besides, the sage, thyme, and marjoram are basically poultry seasoning) and substitute vegetable stock for the chicken (have a few veg heads in my acquaintance). I cook it in the oven in a 9x13 pan with the full quantity of broth with no problems.
