Low Carb Zucchini Pasta

I prepared this with chicken cacciatore from all recipes. It was excellent ! The zucchini pasta was an excellent alternative to spaghetti squash. I prepared this with garlic and Lawry's seasoning salt. Instead of using water I used chicken stock. My zucchini looked a little flat but did the trick for my low carb diet.

Breakfast Pies

I used Pillsbury grands jr. Biscuits I used one per large muffin tin. (Makes 6 but you must add and egg.) If you use a regular size muffin tin then you need to cut the biscuit in half in order for it not to run over. They came out perfect! And they are so yummy!

Easy Mexican Casserole

This recipe wasn't just good, it was great! I used ground turkey because that is what I had on hand. I omitted the sour cream and added taco seasoning and everything else the same. I don't like sour cream but I served it as a side with guacamole. It was a big hit with the family! served the casserole with a salad and could not ask for a better meal.

Crustless Spinach Quiche

I made this one just like the recipe. I was wonderful. I also made it again and added another egg like others suggested. I like it both ways. My family also. I do think it is wise to add another egg, esp. If you are going to add other items.

Zesty Slow Cooker Chicken Barbecue

Oh My This is wonderful. I did use the Sweet Baby Ray's BBQ sauce. It can be found at COSTCO. I used 6 chicken breast halfs. (IE. 3 Whole Chicken breasts) I followed the recipe as stated and shredded the Chicken the before the last hour. The result was outstanding. I used a regular egg roll hamburger bun and OH MY, I did not have any left overs for the next day!!!!

Bermuda Spinach Salad

This was salad is wonderful!! I made the recipe exactly as stated. I would not change a thing. I found real bacon bits that were already prepared so that cut down on the prep time. My 3 year old. Had alot of fun making the dressing. She ate the salad and the salmon that we ate it with. She even put the dressing over the salmon. She kept saying, "mommy this is so tasty!!"

Penne, Tomato, and Mozzarella Salad

This is absolutely wonderful!!!!Cook the scallions, garlic and oil at the same time. Use mozzarella "chunks" if you can find them and fresh basil. I doubled the tomatoes and added a tablespoon of red winevineger and balamic vineger. Also added shrimp and a dash of cayanne pepper!!! Wonderful

BBQ Country Style Ribs

Really good! I cooked the ribs for 3 hours and grill them afterwards. Outstanding. They were very moist. I would add water in the bottom of the pan while cooking and cover with foil. Those of you who had dry or over cooked ribs really did something wrong!

Chicken Breasts Stuffed with Crabmeat

This was a over the top 5 star rating. I did double the crab mixture and the used garlic & herb breadcrumbs, which you can buy in the grocery store. I also used garlic and chive cream cheese. I also found it helpful to brown the sides of the chicken in the skillet and then bake it for approximately 20 mins. or until the liquid runs clear from the chicken.
