Baked Kale Chips
They were ok... don't know if I would ever make them again, but I did really want to try them. The texture was a little... interesting.. kind of like it explodes in your mouth, which some might enjoy but I found to be a bit odd. I tried 2 varieties of kale- the curly one was much better.

Curry Chicken Salad
It is pretty good. My husband loves it and I think it is just pretty good. I didn't add the pickle relish because we don't have any, but I bet that I would enjoy that flavor (I know my husband would hate it that way though and that's probably why I don't keep relish on hand!) I like the curry heat; I had to salt it to bring out that flavor a bit more. We thought it might be really good with some diced green pepper in it.

Easy Decadent Truffles
Made these tonight and so far they are great- the consistency was good for working with and I made 3 flavors just from a 1/2 recipe of the base truffle. I made part of the batch as just plain chocolate with chocolate coating (melted semi-sweet chocolate chips), part of the batch had peppermint extract and the same chocolate coating, and then with the rest I used some bourbon (needed extra powdered sugar to firm it up- also used a bit of almond meal for taste and texture to help with the firming from adding the liquid) and I coated those by rolling them generously in crushed almonds. We tried some before they were really ready and they were good. If something is really different in a day or two as far as flavor or texture, I might need to update my rating but so far they seem to be good! This was the first time I have made truffles such as these- a lot of work getting the chocolate coating on but the basic truffle part was easy!
