Spiced Plum Bread

Very yummy bread!...I rated it 4 stars only because I ended up adding about 1/3 cup of yogurt to the batter because it was so thick it almost needed kneading! It was a great way to use up those leftover plums that had been lurking at the back of my counter.

Gourmet Mushroom Risotto

The best mushroom risotto I've ever eaten was in Valetta, Malta (so good you'd give somebody's left arm for it)and I've been hunting for a good recipe ever since. This recipe is a close second! I've made it twice now, and I've found that I prefer to use about twice as much wine as called for (and of course then cut back on the chicken stock), as well as add a clove of garlic with the shallots (but I love garlic, so this may not be for all). Overall a very good basic recipe with lots of room for customisation.

Zucchini Chocolate Orange Cake

Extremely moist cake, and super easy to make. I grated the zucchini very finely (as I don't like chuncks of vegetable in my desserts!) and I did press a good deal of the water out of the zucchini before folding it in to the batter (as some other comments mentioned that the recipe turned out really gooey) and it turned out wonderfully moist and soft, not gooey at all. I will totally make this cake again; I'd also like to try it as a loaf for breakfast, with more nuts and some dried fruit, too.

Watermelon Summer Salad

This tasted as good as it looked! I didn't have fresh mint on hand, so I used some dried spearmint, and that gave it a spiffy cool note. My husband really liked it too, even the olives (which he never eats)...one caveat, though, if you use kalamata olives, try to get ones that are packed with very little oil (brine is best), as the one's I had on hand were packed with vinegar and oil, and made the salad a little oily.
