Grilled Tilapia with Mango Salsa

I have made this multiple times and it is always delicious. I serve it with brown rice and black beans sprinkled with cumin and lime juice.

Risotto with Tomato, Corn and Basil

This was delicious! Both my husband and I thought it was great. I used fat free milk and light butter and it had a nice creaminess. I also used fresh corn and tomatoes from the farm share and fresh basil. I will say I did cook it about 15 minutes after adding the veggies and next time I might cook it longer before adding them (20 or 25 minutes instead of 15). Thanks!

Potato and Bean Enchiladas

I made these after getting tomatillos and potatoes in our farm share. Cooking and blending the tomatillos was easy. I had a less than a pound of tomatillos and it was a little on the drier side but I am sure a full pound would have been plenty to make enough sauce.

Alison's Gluten-Free Bread

I tried this several weeks ago without a bread machine and it didn't rise and was pretty watery in dough form. I tried again yesterday and added only 1c of milk and 2 packets of yeast (slightly over 1 TBSP) and it was perfect. The flavor is great. I baked at 350 in a loaf pan for 60m. Thanks for the recipe!

Slow Cooker Thai Peanut Pork

Both my husband and I enjoyed the flavor of this dish. Per other reviews, I was worried it would be dry and only put 2 chops in instead of 4 with the same volume of liquid. I did cook it for 8 hours and it was a bit drier than I was hoping. I also only used 2 TBSP of peanut butter at the end and it had a nice peanuty flavor that was not overwhelming. I will definitely make this again, and cook less and try the meat thermometer to make sure the meat is cooked thoroughly.

Grilled Cheese, Cinnamon, and Apple Sandwich

This was quite tasty. I used provolone cheese and a red apple. My husband remarked that it almost tasted like an apple fritter and next time wants to add bacon.

Broiled Tilapia Parmesan

This recipe is awesome - however I substitute the mayo with hummus. I personally don't like mayo and the hummus is healthier too. I've made it several times this way and am always told it is excellent.

Grilled Mojo Chicken Salad With Asparagus and Oranges

Both my boyfriend and I really enjoyed this recipe. I cut each chicken breast into 3 pieces and marinated for about 3 1/2 hours. I then grilled inside on a George Foreman and both the chicken and asparagus turned out great. I will definitely make this again.
