Elegant Orzo with Wilted Spinach and Pine Nuts

Argentine Lentil Stew

This was just okay to me (more like 3.5 stars).... a little bland even after I added the additional spices suggested by other reviewers. The tasty lentil tacos recipe on this website is much better.

I bought the salmon in the packet instead of canned. The canned stuff is really gross... you have to pick out scales and bones. Otherwise, this recipes is great. Super easy to prepare and tasty. The hubby loved it too!

Stuffed Eggplant Parmesan

So much easier, and healthier that the typical eggplant parm! The hubby loved it too. We didn't eat the skin, and I added extra garlic and some orange bell peppers. Other than that, I followed recipe exactly. It also makes a great presentation! Thanks so much for the recipe. I will make again!

Strawberry Spinach Salad I

OMG... this is soooo good! The hubby was a little hesitant at first, but he absolutely loved it too!! :) I didn't chill the dressing first, and didn't have sesame seeds. Otherwise, I followed recipe accordingly. I served it with Stuffed Eggplant Parmesan and fresh Italian Bread. A 5 star meal! Will make again :)
