Oven-Barbecued Spareribs

These ribs were so tender! I was concerned because I had purchased St. Louis style ribs which are a tougher cut but it worked out deliciously. I did sprinkle BBQ powder rub on the ribs first but followed the sauce recipe to a t. I also doubled up the rib amount but the cooking time remained about the same (did check then with a thermometer though). Thanks for sharing!

Easy Baked Tilapia

Great recipe for tilapia! I used this as a base recipe and tweaked it to suit my family's tastes. After reading other reviews, I coated each side with olive oil and added Old Bay liberally. I added lemon/pepper seasoning, sea salt (both from grinder spice bottles), and garlic powder. I omitted the frozen veggies and served with garlic mashed potatoes and fresh cucumbers/tomatoes. I cooked for 20-30 minutes, added crushed seasoned croutons after that cooking time then cooked uncovered for 10 more minutes. Family went crazy! Thanks for sharing!

Fajita Marinade I

Being from Texas, I've tasted all sorts of fajitas from the bland, the peppered, and the citrus. This falls in the citrus category so keep that in mind if you don't like that sort of taste. I made these exactly as written and marinated a beef skirt cut of meat (1-1/2 lbs) for around 5-6 hours. While flavored well, the meat was kind of tough so I would marinade it more next time (possibly overnight). Keep in mind, a beef skirt cut is thin and is what a majority of the southwestern fajitas are made of. Since my family likes the citrus marinades, I will up the quantity of lime next time and scale down the liquid smoke flavoring. We found the smoke flavoring to be a little overpowering. This is a good "base" recipe for many cuts of meat which I will try later.

Black Bean Salad

I have made this recipe so many times and each time there are no leftovers! I have taken it to potlucks, family get-togethers, picnics and everybody goes crazy over this. I do leave out the jalapeno and pimentos and also add an extra avocado (or 2). There is NO way IMO that you can mess this up!

Creamy Parmesan and Sun-Dried Tomato Chicken Penne

Knowing 1 lb of chicken strips or tenders would not feed my family, I doubled the recipe. I used 2 cans of petite diced tomatoes w/garlic & onion and the juice from both cans. I grated my own parmesan cheese and used the whole 5 oz wedge which was a little more than the doubled amount of 1 cup. I also used fat-free half & half to cut down on the calories from the parmesan. Ironically, I only used 1 pkg. of the McCormick mix - I seasoned the chicken breast strips while browning them with garlic salt, season-all and onion powder. This turned out delicious! You couldn't tell anything fat-free had been used in this. In fact my daughter said it tasted like an entree from Carraba's or Olive Garden :) So quick & easy too! Thanks McCormick!
