One Hot Mama's Cooking Challenge- Day Two

     Tonight, we are starting Summer League Bowling apparently. I did not realize that we were signed up. Therefore, dinner had to be simple and quick and early. I spent most of the day working on my spring cleaning/purging. Trash man will deserve a gift after this.
     Today, my new recipe was Enchilada Casserole. http://allrecipes.com/Recipe/Enchilada-Casserole-II/Detail.aspx<  This was very good. It went together rather quickly. I highly recommend that you try it.
     On a side note, I have rearranged my garden plans several times since looking at new recipes. Garden is still on paper. I cannot make up my mind about what to plant. We are veggie lovers so this is torture. Aside from cooking, I am not sure that I am getting anything done.
     Also, my hubby bought a used car last night. We needed something for him to get to work and to teach the kids to drive. It is a stick shift, Mitsubishi Eclipse. It is not perfect but is a rather pretty creamy white color. I was so excited that I made the hubs let me drive it home. Now, I know how to drive. I am a rather good driver. But after I got it warmed up, I stalled the darn thing on the back road curve. Hubby thought that I forgot how to drive a stick. Something is wrong with the idle. Possibly the Throttle Sensor. Poor thing spent his day off under the hood, while I hung up laundry around him and cleaned house. I thought about going out there to help and maybe stick my nose under the hood, but I didn't want to hurt his feelings if I figured it out before him.
     Never anything will be perfect but we are blessed to have afford this car right now.

About Me
I have always loved to cook. I learned on March 10, 2014 that I am allergic to multiple foods. It has created a new challenge for me. I have learned so much more about food and alternative ways to cook. It has been frustrating and enlightening.
My favorite things to cook
I am forced and challenged to cook as frugally as possible. We have chosen to live a thrifty lifestyle, so that I can stay home with the kids. Hubby says that I can make something from nothing.
My favorite family cooking traditions
Cooking as a family. My kids have been cooking for as long as they can remember. I am very proud of the box of recipes found from my grandmother. Some are over 100 years old.
My cooking triumphs
Getting my husband to eat some vegetarian meals. Sticking to a food budget of $400 per month and still having food left in the freezer and pantry at the end of the month.
My cooking tragedies
Sometimes, a new recipe doesn't get eaten. The kids do not like to try new things. I get bored making the same things. I guess the kids like routine.
