Restaurant-Style Buffalo Chicken Wings

i just made these vegan and they were awesome! i froze a package of extra firm tofu for 72 hours to give it a meatier texture, then defrosted it in the fridge, took it out of the container, drained it, squeezed out the water, and placed it between plates with paper towels until it had most of the moisture out. then i followed this recipe to a t, switching out the butter for vegan margarine. these are AMAZING.

Vegan Fajitas

this is one of the best things i have ever eaten. i thought the amount of vinegar was fine. yum! i subbed white wine vinegar for red because it's what i had, and i folded the tortillas up burrito-style and baked them, seam down, at 350 for 12 minutes so the outsides crisped. soooooooooo gooooooood.

Mock Chicken

i use this recipe all the time & i looove ittt. i usually have a package of tofu in the freezer, so most of the time i take it out of the freezer and stick it in the fridge the day before i want to use it. then when i use it, i just drain it and press the water out & forgo the whole simmering business. awesome & easy both ways!

Crunchy Oven Fried Tilapia

the only change i made with this was to add more seasonings to the breadcrumb/cornmeal mixture. it was absolutely fantastic and crunchy! (i also baked it on crumpled aluminum foil like another reviewer suggested and even the bottom got crispy)

Crispy Barbequed Tofu Slices

omg. this was awesome. i had a package of tofu in the freezer already, so i drained and pressed the water out, then sliced into strips. like another reviewer suggested, i baked the strips for about 15 minutes on each side, then followed the recipe for dredging and frying them. i got lazy at the end and just ate the fried strips on a bun with some more barbeque sauce and it was heavennn.

Thai Shrimp Burgers

these are AMAZING. 1) I used my kitchenaid food grinder for all of the shrimp and it worked beautifully 2) I didn't use as much cilantro, because... i really hate cilantro. 3) I used half a jalapeno because the peanut sauce I use is so spicy. 4) I also served them inside the pita, with the slaw stuffed in with them. 5) I cooked them in a frying pan on the stove. If you do this, be careful! They burn really easily. I learned that if you cook them on medium heat it takes a little longer but they won't burn so quickly. All in all, excellent!

Red Pepper Soup

I loved this soup. I used vegetable broth instead of chicken and fat free half and half instead of cream. I don't have a hand blender so I pureed it in batches in my regular blender with no problem. I also didn't strain it. Very yummy and simple, but not bland. We served it with salad and "Double Tomato Bruschetta" from this site and got rave reviews.

Addictive Sweet Potato Burritos

we loved these! i used black beans instead of kidney and left out the soy sauce because i didn't have any. they were amazing though. next time i think i'll mix the bean mixture with the mashed sweet potatoes.

Butternut Squash Soup

I roasted the squash in the oven like other reviewers had suggested and it was super easy to skin and cube up to add to the soup. I also used vegetable stock to make it vegetarian and only added one package of cream cheese. (And some garlic. I put garlic in just about everything.) The first night it was kind of bland, so next time I'll either add more spices or simmer spices in the vegetable stock while the squash roasts. I also felt like it was a bit too thick, so next time I'll halve the cream cheese. Or make it ahead of time. ANYWAY. The second day it was awesome! I added about a cup more broth and it's fantastic.

Thai Chicken Pizza with Carrots and Cilantro

this was awesome! we made half with tofu because one of our guests was vegetarian. we followed the instructions for "mock chicken" from this site and then sliced it thin and sauteed it in a tiny bit of sesame oil and some of the peanut sauce before tossing it with the peanut sauce/peanut butter as instructed in this recipe. then we shredded it and added it to half the pizza. yummy! (i almost liked the tofu side better!) i'll definitely be making this again

these were amazing! i followed the recipe exactly and followed the advice of other reviewers, draining and drying everything very carefully. the patties stayed together perfectly. after dinner i immediately made another batch and froze them to have on hand. will definitely make this again and again!
