Cool Whipped Frosting

This is a fantastically easy recipe! I wanted to make a light, fluffy frosting to use on some cupcakes. I wanted to use my decorator bag to make a swirl on the tops with the frosting and this fit the bill. As I was making it, I realized I made a huge mistake! I didn't wait for the cool whip to defrost completely, I just put it in a bowl with the milk and mixed it with a hand mixer. So much for gently folding it in! Oops! I just added the pudding mix (only had chocolate) and it still turned out great. Not sure if the consistency would be any different had I done it properly, but this worked for what I wanted it for anyway. We even splurged and ate TWO cupcakes which I NEVER do!!!

Peanut Butter Balls I

Our family loves this recipe! My sister-in-law has made it a family tradition. Last year, we weren't able to get together so I was very excited to find this recipe so I could make them on my own! I do NOT like cherries, but they are chopped and add just a hint of flavor. It sounds crazy to add all these different flavors together, but it is oh so delicious! You can make a batch and keep them in the freezer and just pull them out a couple hours before needed! Yummy goodness!

Glazed Mint Brownies

This is my most requested recipe. Since I make about 5-7 batches each holiday season, I have learned how to make them well. We like the minty taste so we usually make extra filling, and of course, extra glaze. Plan to make them a day ahead of when you need them, they are best when chilled in the fridge for a day...if you can wait that long!!! :o) Also, be sure to cool each layer before adding the next. Cooling in the freezer works well in a pinch! Carefully add the chocolate glaze to the top as it starts to melt the frosting layer quickly and you can get a swirl effect before long. Again, this is so yummy and a family favorite especially at holiday time. I've also done red food coloring for Valentine's time. Enjoy!

Chocolate Raspberry Cheesecake

I have been making this cheesecake for many years and am in grave danger if I even hint that I might not! I add some of the raspberry juice and some of the pulp to the chocolate glaze as well for more yummy raspberry flavor. And of course, more raspberries on the bottom! One of my favorite things about this cheesecake is that it only calls for a small amount of cream cheese. Most cheesecakes call for 3 or 4 8-oz packages!

Frozen Banana Treats

I didn't have the Baker's Chocolate but I used melted chocolate chips and butter. And for the outside I used cocount. It was surprisingly delicious...a new family favorite!

Seven Layer Tortilla Pie

This recipe looks delicious and I plan to try it with a twist; instead of baking, making it into a salad! Replace the tortillas with crushed corn chips and add some lettuce. Yum! Nice cool summer salad, filling enough for a meal!
