Microwave Corn on the Cob

You can also do this by husking the corn, putting it into a pyrex dish with a tablespoon of water, and covering the dish with plastic wrap, leaving a corner open for steam to escape. Two ears of corn, 8 minutes in my microwave.

Mint Juleps

Decided to start on my Derby celebrations a little early this year, and found this recipe. Lovely! So much easier than mixing each julep by hand. I plan on keeping the mint syrup around - it will be good in iced tea, too.

Firecracker Grilled Alaska Salmon

This is our favorite salmon recipe. I substitute 1 Tb olive or vegetable oil for the peanut oil - we didn't like the flavor and the recipe doesn't need it.

Curried Honey Mustard Chicken

This is a fabulous recipe - I cut the chicken into cubes before cooking and serve over rice. You can also use regular yellow mustard - just as tasty.

Pork Tenderloin with Balsamic Plum Reduction

An easier way to make the sauce is to peel the plums - that way, you don't have to mess up a blender and spend time cooking the sauce twice. I also throw in a small handful of blueberries for some extra flavor.

Grilled Fish Tacos with Chipotle-Lime Dressing

Totally awesome fish tacos, and easy to put together the night before. Do watch the level of adobo sauce in the sauce, though. We LOVE spicy food and thought the ratio was almost too hot. I'll scale back the next time I make it. It is important to go to the trouble of zesting the limes, though - it's key to the luscious flavor in the fish and sauce. I haven't tried it yet, but I think this marinade would be wonderful on chicken!

Feta Cheese and Bacon Stuffed Breasts

This is an awesome recipe! I used fresh crumbled feta applewood smoked bacon. I didn't cook the bacon first - it cooked fine in the oven. If you don't like feta, try mozarella.

Red Cabbage

Portabella Nirvana

I had to use the recipe as a starting point, but definitely like the concept. I think Italian dressing is way overused as a marinade, so I skipped this step. Also used panko crumbs instead of crackers. Added Italian seasoning to the mix and even skipped the cheese and it still came out very good. Husband says to add it to the list of keepers!

Chicken Asparagus Roll-Ups

Excellent and easy main dish. I know tarragon is not an herb I like, so I used an Italian herb mix. Will definitely be cooking this frequently and plan to occasionally use smoked Gouda for the provolone. I think the sauce and crumb topping would be great on fish. Thanks Monica for a fabulous recipe!

Hoisin Pork Stir Fry

I loved it! I don't think the step to mix the hoisin and cornstarch with the pork added anything to the dish. Typically, cornstarch is added to neat in Asian cooking to add crispyness to the meat, which this did not, so I'll leave that out next time.

Italian Sausage Soup with Tortellini

This is a great soup - one of our favorites. I streamline it a bit by using ground Italian sausage and shredded carrots. I also add a can of white beans. Make sure you use a good red wine for the broth.

Italian Sausage Soup

Love this recipe! We like lots of spice in our soup, so I added Italian seasoning to taste, more broth, and cheese tortellini. I also added diced onions while browning the sausage. Yum!

Grilled Shrimp and Chicken Pasta

Wow, the procedure as written is incorrect. Season the chicken and shrimp. Sauté the chicken in olive oil. Add the shrimp when the chicken is almost done. When both are done, remove from pan. Deglaze the pan with the wine, add the butter, then add the cream. I'd omit the milk. Add seasoning to your sauce and reduce to your desired consistency. Plate the pasta, divide chicken and shrimp, top with your good sauce. Never leave the goodness from sautéing meat in the bottom of your pan! That's the secret to a great sauce.

Almond-Crusted Halibut Crystal Symphony

Well, this is definitely a recipe that can be streamlined. While I loved the flavor, next time I will 1) start the sauce 2) bake the fish ( something cheaper than halibut) 3) make the topping while fish bakes 4) add cream and butter to finish the sauce ( won't bother to strain, just reduce to desired consistency) and 5) set oven to broil, add topping to fish and broil a few minutes to brown. This way, I can make this delicious recipe on weeknights.

Asian Coleslaw

I love Asian food so I was really excited to try this. Unfortunately, the result was an unappetizing brown sludge that was overwhelmed by the flavor of peanut butter. Thanks, but I'll be looking for another Asian Slaw recipe.
