Spicy African Yam Soup

This was delicious! It tastes very authentic, only in Africa you would serve it over rice instead of adding the rice to the soup. I substituted some chopped broccoli for the zucchini because that's what I had on hand, but otherwise made it according to the recipe and am so glad I doubled it! I would highly recommend it! The ingredients are odd but they blend together marvelously! For my own taste, I added black pepper, and my husband added red pepper flakes, but it is a great base to adjust to individual tastes!

Pizza Dough III

This crust is AWESOME! I originally added spices (italian seasoning, garlic powder, etc) but it really doesn't need anything extra! Also, I have made it with 3/4 cup water to cut down on the dough stickiness and it IS less sticky, but the crust doesn't turn out nearly as well. Something in the middle, like 7/8 cup water, is just about perfect. Just be sure to flour your hands and counter before you start playing with your dough! For dough rising, I let it rise for one hour in a warm place (we have a two-deck oven, so I heat the top to 200* and place the bowl covered with a damp tea towel underneath for an hour) and it turns out great every time! I bake our pizzas at 400* on a preheated pizza stone and cooking time depends on the toppings, so keep an eye on it.

Exquisite Pizza Sauce

I have to say I'm confused about this recipe's ratings. This sauce has a very unique flavor that we did not like at all... it has quite a kick for pizza sauce and found that honey sweetening did not mix well with the other flavors. It also takes quite a bit of time to make in comparison to other sauces. I made pizza for my daughter's birthday party (using Easy Pizza Sauce III and Pizza Dough III from this site... both EXCELLENT recipes!) and my sister said she had tried a pizza sauce that received amazing ratings and just tasted bizarre and it turned out it was THIS recipe! We have no clue why this is rated so well, but if you're looking for a great NORMAL pizza sauce, try Easy Pizza Sauce III! The 2 stars are because it was edible... not gross but not good either.

Vegetarian Tortilla Stew

I have made this a few times and I love it! So easy and tasty! The first time I made it I was nervous because we had friends from Mexico over and they said it was the best tortilla soup they had had since they left! I have only used red enchilada sauce because I always prefer red to green. I have made this vegetarian, substituting vegetable broth for buillion and dropping the chicken substitute and I have made it non-vegetarian with boiled and shredded chicken instead of the chicken substitute and using chicken broth instead of buillion. I like it both ways! I typically double the beans and corn and it is great with black beans instead of pinto for a slightly prettier appearance.

Butter Cream Frosting II

Excellent and easy frosting! I only had one box of powdered sugar (4 cups, not 5) so I just added about 1/2 the milk and the consistency was great! Tasty and easy to spread. It dried fairly quickly too so I didn't have to worry about the cupcakes getting all stuck together by the time we got to the party.

Zucchini Brownies

This was definitely better the second day. It turned out wonderfully, and I didn't change a thing. Don't worry about the dryness of the batter. If you mix in the zucchini as best you can, and then let the batter rest for about five minutes, it will get nice and moist and you'll have no trouble spreading it in the pan. I didn't find the cake too sweet, even with the yummy frosting. One final thing--I'd call this cake, not brownies, but that doesn't make 'em any less tasty!

Easy Mint Chocolate Chip Ice Cream

I just took a chef's taste before it went to the freezer to finish setting... wow this is good!! The only change I made was carob chips instead of chocolate and I chopped them a little to make the pieces smaller. I'm so happy to have a tasty ice cream recipe like this that doesn't involve scalding the milk!

Classic Peanut Butter Cookies

A wonderful classic! It's super easy to whip up! This would be a good one for kids to make too since the dough is easy to work with and it's hard to mess up. My variations: I used margarine and I had only 3/4 cup of creamy PB to work with, but it doesn't seem to have suffered much for it. Crunchy would be good as well, but don't be scared to go with creamy! I skipped the hr of refrigeration and it was still very easy to make the balls of dough. Watch the time though... I expect this will take less than 10 mins for many people! I had my oven set to 350* and made my cookies larger and they were perfect at 11 mins.

Sweet Orange Chicken II

My family loves this one! It's so easy to make... I can throw it together in no time. I always add a tbsp or two of cornstarch mixed with OJ at the end to thicken up the sauce. Goes great with wild rice!

Overnight Cinnamon Rolls II

My mom used to slave over our traditional cinnamon rolls every Christmas eve so they would be ready to pop in the oven on Christmas morning... it probably took her an hour. Last year I made these instead and not only did the family rave about them (they taste the same as my mom's old recipe) it only took me 5 mins to make! They're incredibly easy to make and they're delicious! My variation: butterscotch pudding instead of vanilla, no raisins, and I first sprinkle the pudding over the rolls and then mix the cinnamon, brown sugar and butter together to pour on top.

Berry Almond Bars

I used 2/3 cup vanilla chips instead of 1 cup in both places they were called for and these turned out great! I agree with others that a little extra jam would be good, but not necessary. They are fun to make, delicious, and don't take much time! So far everyone who's tried one has raved about it. They make a festive Christmas cookie too!

Easy and Delicious Chicken and Rice Casserole

This dish was VERY easy to put together... it took less than 5 mins. I don't think I will be making it again though, it was boring and bland. There are much better casseroles out there. A bachelor friend of ours raved about it, so it could just be my opinion... or it could be because he never gets home-cooked meals.

Cider Vinegar Chicken

I was very pleasantly surprised by this dish! It sounded very odd, but I thought I'd give it a try because I had the ingredients around even when the cupboards were practically empty! My husband and I loved the tangy flavor and the meat turned out so moist. I used 3/4 cider vinegar and 1/4 red wine vinegar. Except for the fat from the chicken itself this is virtually fat-free... the pan doesn't even need greasing. And consider this: If you want to make something quick and easy for your family, this is healthier and took half the time as mac and cheese from the box! I will definitely be making this again.

Chicken and Wild Rice Casserole

This casserole was very tasty! It made enough to feed a large family and stores well for leftovers. The wine flavored the chicken nicely. I opted to omit the curry and celery (my husband hates both) and the can of mushrooms (personal preference) and it turned out fine. The curry wasn't missed at all with the wine, soup, wild rice mix, and onion to flavor. The only reason for 4 stars is that it does take a long time to prepare for a casserole. I would probably use boneless chicken in the future to save on work, but this was also a good dish to put cheap chicken legs to use even if it took more time.
