Steamed Tuna

This was a really really easy and quick recipe. It's also pretty good, much better than I was expecting at first, actually. I did add some diced tomatoes as well, and served with white rice and a side salad. A reasonably healthy dinner done really quickly.

Stuffed Brie

Made this yesterday as an appetizer for a Thanksgiving get together. It was absolutely awesome. I made the recipe as is, but then wrapped the whole thing in a sheet of puff pastry and put it in the oven for 25 minutes. It was exactly right, not too sweet, but not just savory. I got loads of compliments.

Gramma's Old Fashioned Chili Mac

I made this last night for dinner, as it was cold and wet, and my boyfriend and I both felt like comfort food. It was exactly what we wanted. Nothing fancy, but very very good.

Black Bean and Couscous Salad

Awesome, easy, filling, and healthy. I used white wine vinegar, lemon, and dill as substitutes for the red wine vinegar, lime, and cilantro. I think this took away from the Southwestern sort of taste of the recipe, but it was still great. It seems like a recipe you can play with a lot without messing it up.

Janet's Rich Banana Bread

Turned out so awesome! My boyfriend, who "doesn't like" banana bread ate 3 or 4 pieces immediately. I used non fat yogurt instead of sour cream, three bananas instead of two, and added dried cranberries as well as the walnuts. It's a gorgeous, moist, and a little different. I can't wait to have more ripe bananas!

Chinese Cold Pasta Salad

I made this as a side dish for grilled seafood and it was awesome with a couple teeny changes. First, take the blender advice, it definitely needs to be blended. I also added some rice wine vinegar. Besides that I used wholewheat spaghetti, which made it closer to the soba noodles you probably should use but which are hard to find when you live in Missouri! And, I julienned some cucumber and threw that in as well. Awesome stuff at the end!

Honey Crunch Pecan Pie

I was really disappointed by this recipe. It looked beautiful, the topping by itself was awesome and generally pecan pie is one of my favorites. But, this is definitely too sweet for the average person. I was so proud to take such a beautiful pie to Thanksgiving, but once I got my own slice, I was really upset that everyone would have to force down such an incredibly sweet mess, just to be polite. Maybe, it will be better if I leave the topping off as another review says, but then it won't be as pretty either. I may try this again and attempt to cut the sugar, however I'm not hopeful.

Lemon Chicken II

I'm pretty confused as to why this recipe is getting such excellent ratings. I order lemon chicken quite a bit at Chinese restaurants, and this recipe doesn't come out as expected. I made the recipe, without any changes, and was disappointed. My chicken was edible, but not lemon chicken. As I suspected, the sherry in the marinade was too strong, overpowered the delicacy of the lemon, and was generally out of place in the recipe. The batter was lovely, but pretty unsuitable for the recipe, unless sauced very lightly at the last minute (anything else and such a light batter loses its crunch). Hence, the sauce should be made first, then fry the chicken and drizzle sauce over hot chicken. Lastly the sauce was lovely, but other reviewers are right, the lemons shouldn't be added until the last minute. I'll definitely make this recipe again, but this time with changes.
