Mom's Zucchini Bread
This was incredible! I made a few chances though: I replaced the eggs with 2 overripe bananas to make it vegan. Instead of all AP flour, I used 1 1/2 cups of wheat and 1 1/2 white. Swapped out most of the white sugar for brown, and used a total of 1 3/4 cups of sugar. Also used 3/4 cup of oil instead of 1, and added nutmeg. Awesome and very moist!

Eggless Tofu Spinach Quiche
I've never had quiche, or eggs for that matter, so I'm not sure what this was supposed to taste like ... But I loved it! I added half the amount of spinach, as well as some grated zucchini. I used feta and cheddar cheese. The feta really adds a great flavor. I also love a little spice, so some chili flakes made it in too. To make it a bit healthier, I omiteed the crust, but it still made a great dinner!

Tater Tot Bake
Great recipe, and easily made vegetarian! I used Boca soy crumbles in place of the beef, and lower fat mushroom soup. I also followed some others' suggestions and combined the soup, "beef" and onions in the skillet and made them the base layer. And my meat-loving boyfriend absolutely loves it!
