Creamy Fruit Dip

Chocolate Cobbler

I've read several reviews that state this comes out as a runny mess. I really do not understand that. My mother used to make this (or something similar) and I was so excited to find this recipe for it. I've made it several times and it comes out fine every time. I do not keep self-rising flour, so I add 1 c. all-purpose flour, 1-1/2 t. baking powder and 1/2 t. salt to the batter. That is the only change I make. The cobbler comes out with a chocolate cake-like top layer and a chocolate pudding bottom layer. Be careful though. This really needs to cool down to just above room temperature in order for the pudding layer to 'set up'. I cool it completely, then reheat slightly in the microwave.

Apple-Cranberry Crisp

I have made this several times and always receive rave comments. I use an apple peeler so the slices are thin. I bake it at 40 minutes - I once baked it for 50 minutes and the apples were mushy/overdone. Serve it warm with vanilla ice cream.

Aunt Betty's Banana Pudding

Before I tried this recipe, I showed it to a few of the Southern chefs at our church (they are known for the banana pudding at events). When I was told that this is the same recipe as theirs, I tried it. It was wonderful! I have made it several times according to this recipe and have always received rave comment.s

Cadillac Pimento Cheese

I made this by the recipe: for me, there was not enough pimento flavor and I did not care for the processed cheese. Next time, I shredded block sharp cheddar cheese and used a 4-oz jar of pimentos, adding about 1/2 the pimento juice to the mixture. I let the cheese mixture sit refrigerated overnight. Loved it! My friends finished it off so quickly that I wished I had doubled the recipe.

Creamy Au Gratin Potatoes

Pretty good, although I did make the following changes. First, I diced the onion. Then, I added 1 clove minced garlic and 1/2 t. hot sauce to the cheese sauce. I also added the onion to the cheese sauce. I made the cheese sauce from 1/2 sharp cheddar and 1/2 monterey jack. I alternated the potato and cheese sauce layers until finishing the top with the sauce. I think that next time I will increase the garlic to 2 cloves and add more hot sauce (1 t.). I used the given amount of butter and cheeses...did not get a greasy dish like some other reviews.

Baked Ziti I

This is very tasty and was very popular at a covered dish dinner. I varied it slightly, using 3/4 c. ricotta cheese and 3/4 c. sour cream instead of sour cream only. I also used 8 oz. each of the provolone and mozzarella cheeses. I mixed the ziti and sauce together before layering: 1/2 ziti/sauce mix, provolone cheese, ricotta cheese/sour cream mix, 1/2 mozzarella, remaining ziti/sauce mix, remaining mozzarella, and finally the parmesan cheese.

Banana Smoothie I

Instead of 1 egg, I add 2 egg whites to eliminate the chloresterol content of the yolk. Plus, I cannot taste the egg whites at all! I also cut up and freeze the banana the night before. Tastes great and is a quick way to get my protein and fruit in the morning!
