Quick and Easy Alfredo Sauce

Excellent & very easy sauce. I chose to use a double boiler instead of direct. I also added about a cup of shredded low fat mozzarella. I cooked whole wheat penne pasta & after draining, tossed that with 2 cups of diced leftover roasted chicken and 1 cup of leftover green peas. The alfredo sauce I poured over the pasta mixture in an oven proof casserole. Baked at 375 for about 20 minutes to just toast the top. My husband says this is an absolute favorite from now on.

Grandma's Corn Pudding

Definitely the old fashioned country recipe for corn pudding. I substituted Splenda for the sugar, and I did add a teaspoon of vanilla and a sprinkle of cinnamon on top. All of my friends at the holiday cookout raved about the recipe, and I've had four or five recipe requests already.

Barbeque Sauce II

Excellent recipe! I used this recipe the first time about a month ago on some pork ribs and was really impressed. Friday morning prior to Labor Day this year, I did my usual dry rub on an 8 lb pork shoulder; Sunday night before Labor Day, the shoulder when on the grill at 215 degrees for a very relaxing 13 hours. Ten minutes of rest after coming off the grill, then the pulling began -- with intermittent doses of sauce. The pork & sauce got rave reviews at our neighborhood cookout, and now my son is anxious to introduce the sauce & pulled pork to Texas !

Apple-Cran-Cherry Oatmeal Cookies

Fantastic ! I absolutely loved them, while my husband was less enthusiastic, but then I do the baking and we eat very few sweets. In fact, after the inital taste test, the rest of the recipe is headed to IRAQ in a goodie box for a great friend who's stationed there. He & his crew love oatmeal, so this should definitely fit the bill; and the tartness of the dried fruit is perfect. The recipe will be on my replay list. The only change I made to the recipe was to use a whole jar of chunky applesauce rather than the smooth.

Forever Fresh Cookies

Good recipe, but in my husband's words, "I'd really like the regular chocolate chip recipe better". I liked the additional fiber content, but as an earlier reviewer noted, my first attempt was a bit dry ... I'll try some adjustments on the next batch, but will definitely try again.

Rocky Road Drops

Cook friendly and very GOOD. The butterscotch gets lost in the chocolate, and I intend to try just a butterscotch version to compare the difference. My son,and the guys at my husbands dealership just went crazy.

High Temperature Eye-of-Round Roast

Absolutely EXCELLENT ! I fixed this for Christmas dinner yesterday, and heard nothing but raves from the family. My roast was just under 4.5 lbs, and I followed the directions exactly; cooking at 475 for 31 minutes, and then turning off the oven for the last 2 1/2 hrs. I had seasoned the roast with salt, pepper, and rubbed about 3 tsp. of horseradish over the entire roast. A spectacular hit, and everyone's looking forward to leftovers this evening.

Eastern North Carolina Barbeque Sauce

Exceptional ! This recipe gets rave reviews every time we do pulled pork BBQ! Friends who grew up in NC love it ..... and for those who're monitoring certain ingredients for diets - - it's gluten free, and I substitute Splenda Brown Sugar for those watching sugar intake. A real winner !

Peach Pound Cake

This is the same recipe that I took from the Fredericksburg Free-Lance Star about 15 years ago, and it's a favorite with our family. The white peaches from Virginia are firm enough to not mush up while mixing the batter. I do add more than the 2 cups of peaches called for in the recipe (between 1/2 cup and a full cup more). When the cake is removed from the pan for cooling, I poke some holes in the cake and drizzle apricot schnappes or brandy over it for an extra pop.

Cashew Cookies

This is a fantastic enhancement to the traditional sour cream cookie. The icing is just the right touch of sweetness for the 'not so sweet' but wonderfully flavored cookie. I had to hid the storage container from my mother-in-law so I'd have some left for the holiday ! She was VERY impressed!
