Best Chocolate Chip Cookies

Creamy Garlic Mushroom Chicken

Though I made a few modifications my boyfriend and I really enjoyed this recipe. Since I was only cooking for 2 (and needed leftovers for 1 lunch the next day) I halved the recipe, cut the chicken breasts in large bite sized pieces and only used 1 can of cream of mushroom soup (didn't have garlic mushroom so I used plain mushroom) with half a can of milk to avoid the extra sauce noted in other reviews. In taste testing the soup/mayo/sour cream/parm mixture I found it kind of plain so I added a healthy shake of garlic powder, paprika and black pepper before combining the chicken and sauce in the pan. I baked it on the fly timewise so I'm not sure how that altered the cooktime (I just removed when bubbly and the breadcrumbs were golden brown). It was delicious! My BF absolutely loved it and had seconds. I served it over garlic mashed potatoes (we like garlic here:) with green beans and cornbread.

Syracuse Salt Potatoes

I LOVE these potatoes! They taste fantastic and my roommates loved them too. Be careful to balance out your potato weight and the water/salt ratio, the first time I made this I incorrectly guestimated my potatos and it was almost too salty. The second (and third and fourth and fifth!) times it was fantastic and my roommates beg me to make this all the time!

Easy Polenta with Tomato Sauce

I love this recipe! I have made it over and over again. My roommates can't wait for it to get out of the oven every time I make it. It's even better the next day when the polent has a chance to firm up. Just YUM!

Lemon-Lime Chicken Broil

I really liked this recipe, however I made some changes/additions for personal preferance. I increased the lemon juice to 3/4cup, and added 3 minced garlic cloves to the marinade. I marinaded it for a hour in the fridge, placed it on the broiler pan and added pepper to the seasoning. Turned out fantastic. Will make again.

Slow Cooker Lemon Garlic Chicken II

This was fantastic. I made a few modifications based on what I had and other reviewers recommendations. I used boneless, skinless chicken breasts (thats what I had on hand) and used 1 cup of chicken broth in place of the bouillon and water. I also upped the lemon juice to just shy half a cup (I wanted something really lemoney, it was 2 juiced lemons) and doubled the spices rubbed into the chicken. I will be making this quite often!

Savory Crab Stuffed Mushrooms

This is a great recipe. Just served this at a party last night and it was a hit! Several people asked for the recipe too. I did add some alterations, I added some minced garlic when sauteing the mushroom stems and green onion. I also added a few dashes of worchestershire sauce to the final mix before stuffing the mushroom caps for a bit of kick. Very good overall.

Gingerbread Men

Very good if you like spicy gingerbread men (and we do!) we made this as Christmas cookie handouts and everyone loved them. However we made a few changes, we increased the cinnamon to 2 tsp. and added 1 1/2 tsp. of black pepper for some more kick. They came out awsome and especially the older relatives who were used to a spicer, not sweet gingerbread loved them (we did too, and kept some for ourselves!). Will definitly make again.

White Chocolate Chip Oatmeal Cookies

I LOVE this recipe! I did change one thing, I exchanged the pecans for dried cranberries and took them to a christmas cookie exchange, at least 5 people asked for the recipe that night and I've gotten 2 more calls since. I'm making them again today to take to my family christmas celebration, I'm sure they'll be a hit there too!

Balsamic Roasted Red Potatoes

This was fantastic! We love roasted potatoes and are balsamic vinegar addicts so this was perfect! I didn't have nutmeg or the green onions, however it turned out great. The house smelled wonderful while the potatoes/garlic/rosemary and thyme were roasting and the balsamic adds a tarty sweetness. Will definitely make again and again!

Super-Delicious Zuppa Toscana

This soup is fantastic. I made some changes to make it Weigh Watcher's friendly and it was great. I love the original version at Olive Garden (I had a roommate in college who worked there and would bring some home for me a couple of times a week) and it was super close! The changes I made were: I used Jennie-O Italian Seasoned Ground Turkey instead of italian sausage (I also added a bit of fennel seed to give it more of an italian sausage flavor), I also subbed a 50/50 mix of fat free evaporated milk and fat free milk instead of the heavy whipping cream, reduced sodium chicken broth, Jennie-O Extra Lean Turkey Bacon and I used flat leaf parsley instead of spinach because thats what I had on hand. It was fabulous and 4 points a serving for any other WW's out there!

Tender Italian Baked Chicken

This was great, even my boyfriend's picky two year old loved them. I did make a couple of minor changes, I eyeballed the mayo, parm & garlic amounts as well as added an equal amount of onion powder and a few dashes of salt & pepper. Plus I added a touch more Italian Seasoning to the Italian Breadcrumbs I had at home. Baked for 15 minutes, turned and baked under the broiler for another 5. Turned out crispy and great. The trick to making these crispy I think is turning them at least once.

Favorite Peanut Butter Cookies

We LOVED these cookies! I made a batch for my dad who loves peanut butter cookies and couldn't stop eating them myself! My dad loved them too. The only changes I made were to follow the 10 minute suggestion of the other reviews (they came out perfect) and to add peanut butter/chocolate swirl chips but they would be perfect without them as well.

Fast English Muffin Pizzas

Perfect for today's lazy sunday lunch. I mainly used this recipe for oven temp/times since I haven't made these in years and forgot those bits. I took reviewer's advice and toasted the english muffins before putthing them together, used diced leftover hamsteak in place of pepperoni (didn't have any on hand) and sprinkled with garlic powder, italian seasoning and pepper before putting in the oven. Yum!

Savory Mushroom-Barley Soup

This was really great, I did add some garlic and some crumbled, browned sage sausage to bulk it up. Also chopped up two large portabellas to add to it and it was a big hit. Fed my roommates and I (3 people total) lunch and dinner for 3 days! Will make again!

Cod with Italian Crumb Topping

Like some others I found the crust tasty but the fish really bland. I even tried the mayo/lemon juice mixture as well and followed the rest of the recipe to the T and it just fell flat for us. Perhaps using some herbs on the fish before crusting would help? Also I followed the other reviewers advice on soaking the fish in milk prior to baking and it did take away all of the "fishy" taste! Because of that I even got my stepson to eat some!
