This was excellent! Just enough heat for me, but some may wish more. Jasmine rice was the perfect compliment.

Double Crust Bean Pie

Reviewed: Jun. 25, 2002
This was awesome!!! I omitted the bell and red peppers but did keep the cayenne and chili powder at the recipe amount and didn't think it was too hot. I also added 1/4 cup of frozen corn. My husband and I almost ate the whole pie in one sitting!

Cajun Chicken Pasta

Reviewed: Jan. 23, 2001
BRAVO!!!!!!! Wonderful recipe. A new staple in our home. I also added a little more cajun spice (1 1/2-2 TBS). Fantastic with a salad and crusty French bread. If you are serving people who aren't partial to peppers, shred them fine with a cheese grater. Still get the flavor but won't scare the pepper haters away!

Mexican Layered Dip

Reviewed: Aug. 7, 2000
I have made this recipe for years in many variations. I have added 1/2 cup mayo to sour cream. I have omitted the guacomole and added chopped black olives. I have used a mixture of cheddar and Monterey Jack. I have even added a layer of salsa on top of the beans! No matter how, this recipe is always great!
