My favorite things to cook
I love to grill on the barbecue (charcoal is always better, in my opinion). I enjoy cooking Mexican, American, and am always trying to make my recipes heart-healthy. I'm not into making things "fat-free" or "sugar-free". Instead, I like to tweak recipes to make them healthier by reducing sugar/oils to a point that you still don't taste what's missing, but my thighs are saying thanks! :)
My favorite family cooking traditions
Thanksgiving is always a HUGE event! My favorite part of the meal is the Southern Sweet Potato Souffle ... excellent! My Grandmother and Mom would let me experiment in the kitchen since I was 7 years old. It started off with the traditional cookies and brownies, and since then has evolved into a love for making all sorts of recipes!
My cooking triumphs
My husband absolutely loves my cooking! And my Dad always asks me to give my recipes to my Mom when they visit ... what better compliments than these?
My cooking tragedies
Certain types of brownies do NOT turn out well for me, regardless of my tweaking with the recipe and my oven. However, being military I've moved around a lot, and so I get to work with many ovens that are not my own. I used to have an excellent recipe for fudge, but I tried to make it when I first moved to El Paso and it completely flopped! Must be the dry heat ...

Salsa Chicken
This is a good recipe for slow-cooking shredded chicken for tacos or enchiladas. I covered the chicken in taco seasoning, lined the bottom of the crock pot with salsa, placed the chicken on top, and added more salsa on it all. Cooked on low for 6 hours; very easy to shred and a great taco meal!

Angel Chicken Pasta
I was so disappointed in this recipe! With all the rave reviews, I thought surely this was a great pasta recipe. I followed the recipe - only doubled the sauce - and, even though it smelled GREAT while cooking on the stovetop, the end result was quite mediocre. My husband thought it tasted alright, but all I could taste was a heavy, soup flavored sauce with some italian seasoning. The calories included in this dish didn't make me feel any better - what a waste! Sorry, but I won't be making this again.

Restaurant Style Chicken Nachos
These were pretty good! My husband loved them; there were hardly any leftovers! Personally, they were were good but nothing spectacular. I added some homemade taco seasoning from this site instead of just salt and pepper. I think it gives it good flavor.
