My favorite things to cook
I love to grill on the barbecue (charcoal is always better, in my opinion). I enjoy cooking Mexican, American, and am always trying to make my recipes heart-healthy. I'm not into making things "fat-free" or "sugar-free". Instead, I like to tweak recipes to make them healthier by reducing sugar/oils to a point that you still don't taste what's missing, but my thighs are saying thanks! :)
My favorite family cooking traditions
Thanksgiving is always a HUGE event! My favorite part of the meal is the Southern Sweet Potato Souffle ... excellent! My Grandmother and Mom would let me experiment in the kitchen since I was 7 years old. It started off with the traditional cookies and brownies, and since then has evolved into a love for making all sorts of recipes!
My cooking triumphs
My husband absolutely loves my cooking! And my Dad always asks me to give my recipes to my Mom when they visit ... what better compliments than these?
My cooking tragedies
Certain types of brownies do NOT turn out well for me, regardless of my tweaking with the recipe and my oven. However, being military I've moved around a lot, and so I get to work with many ovens that are not my own. I used to have an excellent recipe for fudge, but I tried to make it when I first moved to El Paso and it completely flopped! Must be the dry heat ...

Easy Batter Fruit Cobbler
This is now my go-to recipe for a simple, scrumptious cobbler! SO easy!! I used slightly less butter and sugar for mine, along with a mix of fresh blackberries and frozen blueberries. Yum, yum, yum. It was gone in two days! Don't forget, when pouring batter in the pan, make sure you MIX the melted butter and the batter, or else it will be a greasy edged mess.

Oregon Salmon Patties
I added one egg, full amount of crackers, and no juice and it was still impossible to make patties. The flavor was bland, and the texture was too much for me

Beef Stroganoff III
It was ok. Felt like it was missing something, even with garlic added and marinating the beef in red wine. Oh, and don't use anything but chuck roast if you're going to use a roast ... tougher sides of meat don't work for a short cooking time.
