Italian Style Meatloaf I

I didn't have mozzarella...substituted parmigiano reggiano....left out the tomatoes. It was fabulous! My husband ate 3 helpings, and we think it's the BEST meatloaf.

Rib Eye Steaks with a Soy and Ginger Marinade

Absolutely Fabulous Greek/House Dressing

Cafeteria Macaroni and Cheese

We added peas and a can of albacore tuna for some protein. I would definitely add more cheese next time. The worchestshire is a great addition to the traditional mac-n-cheese.

Baked Salmon with Coconut Crust

I used grouper for this recipe which turned out to be a good choice. I also added olive oil, sesame oil, and ginger to the lime juice and marinated the fish for 3 hours. The flavor was great - and the coconut adds an interesting touch.

Roasted Potatoes with Tomatoes, Basil, and Garlic

The flavor for this dish is excellent. However, I added salt,pepper and extra rosemary - and I'm glad I did, or it would've been very bland. Also, the temperature and time allowed on this dish is inaccurate. I roasted at 400F for 35 minutes, and the potatoes were not completely done.
