Shalvie's Passover Pancakes

Kids loved it. I like that its a little different and incorporates nuts. I made mine on a skillet over the stove with a little oil. Serve with maple syrup, yum!

Minestrone Soup I

ONe of the best soups I have made, and I have made a lot of soups. I also added some zuccini and doubled the recipe and added some water. The key is to start with good chicken broth! This is a keeper for sure.

Limehouse Chicken

Both me and my husband and all the kids really liked this. Everyone went up for seconds except for my one picky son. Will definetely make this again. Only drawback is that I have to open a bottle of wine to make it.

Baked Haddock

Everyone loved this! Took another's suggestion by putting it on a baking rack before putting it in the oven and squeezing some lemon on it. Only cooked it for 10 min. Kids even ate it.

Way better then I would have ever thought. I am trying to find some kid friendly vegetarian meals. One of three of my kids would try this and she had seconds! I had to make a second batch we ate so many!

Homemade Black Bean Veggie Burgers

Did the recipe with some of the recomendations listed, cooked the peppers and onion a little first, used dry beans instead of canned, rinsed and dried beans. used two eggs instead of one and grilled burgers on aluminum foil. They were a little too dry and a little too spicy for the kids. May try again but will not put as much spice and maybe less bread crumbs.

Yummy Bok Choy Salad

This recipe is great, but I made modifications to make it healthier. I only used 1/4 sugar and used apple cider vinegar and ommited the chow mein noodles. I used dried apples instead. I also used regular bok choy instead of baby bok choy bc that is what I could find.My husband and I loved the recipe. Couldn't get the kids onboard though. ( 7 pts. with Weight Watchers)

Prosciutto-Wrapped Chicken Breasts with Herbed Goat Cheese

Loved it and didn't have the fresh herbs. I used dried herbs ( herbs de provance) and dried figs instead. Me and my husband loved it and all three kids did not like it at all, so keep that in mind when you are making it for the family. Better served as a nice dinner when you have guests. YUM!

Caramel Apple Dip

I make this a little different. I use confectionary sugar - 2 pksg. of cream cheese and concode caramel dip - ( found in the produce section) I use an electric mixer for the cream cheese, layer it on the bottom, warm the caramel in the microwave and spread it on top and use green apples to dip. It is always a crowd pleaser! You can cut the apples a head of time , put in a zip lock bag with a little orange juice so they don't brown.

Cosmo-Style Pomegranate Martini

Used this recipe over new Years and was a big hit. Although I did alter it a little. I only used 1 oz. of vodka. I think it would have been to strong for us with two ounces. I also added fresh pomegranite to the bottom of the glass and rimmed the glassed with sugar. YUM! I can't wait to make these again.

Artichoke Chicken

Definetely took everyone's advice and swapped some of the mayo. Didn't have sour cream but swapped it for strained yogurt. Did 1/4 mayo, and 1/2 cup yogurt. Was very good. Would definetely make it again.

Whole Grain Waffles

EVERYONE IN MY HOUSE LOVED THEM. I thought they needed more sugar. They weren't sweet enough for me. But it is a good recipe for healthy waffles. I also used ground oats instead of flax seed meal.
