Crispy Fish

Reviewed: Mar. 23, 2009
We loved this recipe. It was perfectly seasoned and the coating stuck to the fish perfectly. I always have problems with the coating flaking off during frying, but this came out great. The texture of this was wonderful-it truely is "crispy" fish. The only change I made was frying in canola oil instead of crisco.

Pork Chalupas

Reviewed: Oct. 22, 2009
I have made this several times and it always turns out great. I add a little cornstarch mixed with water to the sauce at the end to thicken it a little. I have a small family, so there is always plently left. I divide up the leftovers and freeze for future dinners. I used some in a mexican lasagna last night and it was delish!

Baked Homemade Macaroni and Cheese

Reviewed: Oct. 22, 2009
I followed the recipe exactly, except I added some keilbasa. My toddler gobbled it up, but my husband and I didn't really care for the flavor of the sauce. If I hadn't added the keilbasa, it would not have been edible, it would have been flavorless. It needs some spices: onion powder, garlic powder, ground mustard, and I think it needs more cheese in the sauce.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Oct. 22, 2009
I have been trying to find some ways to incorporate more turkey and less beef into my family's meals, but we did not care for the flavor or texture of this meatloaf.

Pam's Bierocks

Reviewed: Oct. 22, 2009
I make these frequently and they always turn out great. The only thing I do different is add a little flour and milk to the filling at the end to make it creamer. Also, this is my go to bread dough recipe. I use it for dinner rolls and cinnamon rolls.

Yummy Sweet Potato Casserole

Reviewed: Dec. 1, 2009
I made this for Thanksgiving with the addition of some cinnamon and nutmeg. I also added some extra sugar. I would start with the 1/2 cup suggested and adjust to your taste as the sweetness of the potatoes will vary. Everyone enjoyed it, even the people that don't care for sweet potatoes said it was good.

Delish! I made them with white chocolate chips and craisins. It is the perfect combination of sweet, tart, and a little salty.

Apple Dip

Reviewed: Sep. 1, 2010
This is super easy and yummy! I just put the cream cheese in my storage container and microwaved it for about 30 seconds, whipped it up with a fork, then stirred in the brown sugar and vanilla--No dirty beaters or mixing bowl to deal with.

Classic Goulash

Reviewed: Sep. 1, 2010
We weren't a big fan of the seasoning in this, but I give it 4 stars for being a good base recipe and the fact that it is a one pot dish; I love that you don't have to cook the macaroni separate. I think I'll try switching to a taco flavor next time and see how it goes.

Banana Oatmeal Cookie

Reviewed: Nov. 17, 2010
These have more of a muffin texture instead of a cookie. Mine did not spread at all, so they resembled mini muffins. My two year old enjoyed them, but I don't know that I will make them again.

Pheasant Nuggets

Reviewed: Nov. 23, 2010
Awesome! Finally a way to use up all those birds in my freezer. I used the breast and thighs and cut them into nugget size. I did marinate them in a little italian dressing for a few hours. They were tender and tasted great-no gamey taste at all. My toddler gobbled them up.

Super Chicken Casserole

Reviewed: Nov. 29, 2010
This was a great easy weeknight meal. I had to improvise a little for what I had on hand. I used leftover Thanksgiving turkey, cream of mushroom soup, and frozen chopped broccoli. I also didn't have any stuffing so crushed up some garlic and herb croutons on top-didn't even need the butter. My two year old gobbled it up. Will definetly make again.

LauHilLau Cookies

I've been on the lookout for a banana cookies that didn't turn out like a muffin and this is it. I opted to use a whole banana instead of half, so I had to increase my dry ingredients to compensate. I used 1 3//4 c. flour and 1 1/2 c. oats, and they turned out perfect. I didn't have any problem with them spreading or sticking as other have. In my opinion they were the perfect mix of crispy on the outside, chewy on the inside.

Quick Enchilada Sauce

Reviewed: Sep. 14, 2012
The method on this was great and the thickness turned out perfect. The only change I made was to up the spices...I tripled most of them. I was able to quickly thow it together and let it simmer while I browned the ground beef. It helped me get an easy enchilada casserole on the table in about 45 minutes on a weeknight.

Wolf's Bourbon Chicken

Reviewed: Sep. 24, 2012
This was a easy weeknight meal enjoyed by all, including my four year old. I used whole boneless, skinless thighs and put them in the marinade before work, then when I got home I threw it in the oven with a simple rice pilaf, and dinner was on the table in an hour. I skipped the step of transferring to a skillet and adding the wine at the end because it just seemed like extra dishes to wash! I may try adding just a little corn starch to the sauce next time, so it will thicken slightly in the oven.

Classic Rice Pilaf

Reviewed: Sep. 24, 2012
Turned out perfect. I stuck it in the oven with Wolf's Bourbon Chicken for a easy weeknight meal. The only change I made was to omit the salt. I knew my chicken would be salty and didn't want to go overboard.
