Best Chocolate Chip Cookies

My kids and I just made these and they are the BEST chocolate chip cookies I've ever made! I took the advice of some other reviewers and reduced the white sugar to 3/4 cup and increased the brown sugar to 1 1/4 cups. Other than that, left the recipe as it was. SO delicious!!!!

Eggplant Parmesan II

This was SO good!! I did sweat the eggplant slices, as others suggested. It definitely made a difference...no bitterness at all! I air-baked the slices after breading them at 450 degrees for 10 minutes (didn't bother flipping them since I was air-baking them). They came out tender and crisp! Then layered it in the pan with sauce and cheese and baked as directed . My kids were asking for seconds...they LOVED it! They thought it was chicken parmesan...they had no clue they were eating a vegetable!

Buttermilk Pancakes I

These were so good and easy to make! To lighten them up a bit, I used less than 1/4 of Splenda (instead of sugar), canola oil (instead of veg oil), white whole wheat flour (instead of regular flour) and I sprinkled in a little bit of ground flaxseed and added 1 tsp vanilla. My kids gobbled them up, saying they were better than IHOP's pancakes! The pancakes were light and fluffy...perfect! I think the buttermilk is the key to tasty pancakes!

Marinade for Chicken

Seriously, the best marinade I've ever made! I cut the recipe down to only 8 servings because the original recipe makes a lot!! I've used the marinade for as short as 2 hours and as long as 24 hours...the chicken is delicious either way, no matter how long it's been marinating! Definitely a keeper!

Carol's Chicken Salad

This is is probably the best chicken salad recipe I've tasted! I didn't have green onions, water chestnuts, cheese or grapes so it was pretty basic but sstill SO very good! My kids asked for seconds, and that's saying a lot!

Crab Rangoon III

These were amazing!! I took the advice of one of the reviews and used the Philadelphia onion/chive cream cheese (2 small containers), used only 1 can of crab and then added the paprika and garlic powder. I also baked them, and they came out nice and crispy! My kids can't stop eating them! I also made the "quick dipping sauce" from this site to dip them in!

Quick Egg Roll Dipping Sauce

This is SO good! I made crab rangoon and used this as a dipping sauce! My kids couldn't get enough! It would be good as a marinade too! I did decrease the vinegar to 1.5 tbs.

Baby Back Ribs

Oh.My.God. These ribs were fantastic!! I'm not the greatest cook in the world and this was my first time making ribs but my husband loves ribs so I thought I'd take a shot. I didn't have time to marinate except for an hour but the ribs still turned out nice and tender. I did use a rub that was suggested here by someone and then coated the ribs in tons of BBQ sauce and then wrapped in foil. Cooked at 300 degrees for 2.5 hours and then opened the foil up and broiled for about 10 minutes. I have 4 kids under the age of 3 and they were all begging for seconds! My husband said these ribs were better than any restaurant he's ever had ribs at. This will be a regular meal in our home!

Simple Turkey Chili

This was the best chili I've ever made! And it was so easy! I only added 1 cup of water because we like our chili on the thicker side. I also added a can of mild chili beans. I only put in a little bit of chili powder since my kids don't like spicy food but it was still really yummy! I served it on top of penne pasta with a huge heap of shredded cheddar cheese on top of the chili. My husband, who is very picky, LOVED it...he wants to eat the left-overs tomorrow night for dinner! My 3 yr old twins liked it and even my 13-month old twins loved it and kept wanting more!
