Pumpkin Brownies

These brownies turned out amazing! They are more of a cakey bar than a brownie, but they are delicious! I doubled the recipe and used a 9x13 pan. I just spread all of the chocolate batter on the bottom, then spread all of the pumpkin batter over top and swirled it. Instead of using walnuts in the pumpkin batter, I chopped up white choco chips and added them. Turned out great! Very rich!

Jacky's Fruit and Yogurt Muffins

Very moist, very delicious! I used whole wheat flour and substituted half the amount of sugar with Splenda. I used fat free strawberry yogurt and made half the batter with blueberries and the other half with strawberries and bananas. Yummy! I love this recipe! I'm going to make orange-flavor muffins next.

Peanut Butter Banana Oatmeal Raisin

These were absolutely delicious! I used two bananas instead of only one. Couldn't taste the peanut butter much though. Maybe next time I'll use only one banana. I also used Splenda instead of white sugar, which unfortunately cut the sweetness a lot, but they were still yummy. I used dark chocolate chips instead of raisins, which were a bit weird. Maybe milk chocolate chips next time. Either way, they were tasty, and I love how healthy they are!

Citrus Spiced Pork Lo Mein

I thought it was quite tasty. It was a little strange with the warm mandarin oranges, but I like the orange flavor. I omitted the red pepper, however, because I don't like spicy foods that much. The sauce was rather watery. Maybe a little cornstarch would help?

Mocha Chocolate Cookies

Even after doubling the amount of coffee, you still couldn't taste the coffee flavor after the cookies were baked. You could taste it just fine in the dough, though. However, the dough was more like a batter. Very liquidy, should chill for a while first. The cookies stuck to the bottom of the pans pretty badly. I even tried greasing the pan for my last batch, but it did not help much. In the aftermath, the bottoms were scraped up, the cookies were crunchy around the edges, soft in the middle, and tasted just like chocolate cookies.
