Homemade Black Bean Veggie Burgers

Delicious! I didn't have green peppers so I used grated carrot instead. I'll definitely make these again and I'll just use whatever veggies I have on hand. I made the patties and then refrigerated them for 1/2 an hour and that made them even more solid. I baked them and had no issues with them falling apart. Great recipe!

Spicy Sweet Potato Salad

This was ok. The sweet potatoes added an interesting flavor but something was missing for me. Probably the lack of tanginess from pickles or vinegar. Probably won't make again.

Spicy Shrimp and Grits

I had some leftover cheesy grits so I just added those to the the sauteed veggies and heated through. I didn't even bake it. Delicious and ridiculously easy! I was shocked by what great flavor this had without a lot of ingredients. This will go into the rotation for sure!

Fall Festive-tini

This was WAY too sweet for my liking. And unfortunately, too sweet for my guests as well. It might be better with much less schnapps but I probably won't try it again. I would recommend the Grey Goose Peartini if you're looking for a cocktail with these flavors.

Sweet Pea Mockamole

I honestly don't know how anyone could confuse this with real guacamole. Not only did it NOT taste like guac, it didn't taste good period. The peas were just way too sweet and watery.

Thai Noodle Salad

This was great! We used rice noodles instead and coleslaw mix (as one of the other reviewers suggested) in place of the shredded cabbage and carrot. Easy! We also sauteed the veggies to soften them a bit and make this more of a stir fry than salad. The sauce has incredible flavor! It might be a bit strong for some but can easily be diluted with broth or coconut milk. This is a keeper!

Hazelnut-Mushroom Pilaf

This was really good! I noticed that a lot of people were using other nuts but I really recommend the hazelnuts if you can find them. They're delicious and add a really nice fall flavor to the dish. My husband and I ate this as a main dish so we doubled the onions and mushrooms to make it heartier and used veggie broth instead of chicken and served it with a side of roasted squash. Next time I'll double the recipe so we have more leftovers. Delicious for so few ingredients!

Spicy Sweet Potato and Coconut Soup

Delicious! We doubled the curry paste to add more spice and also added about a teaspoon of fish sauce. As another reader recommended, we added mushrooms and next time I'll add red bell peppers too. Excellent!

Fresh Asparagus Soup

I used the soy milk as suggested and replaced the other dairy ingredients with their soy counterparts and this soup was a complete disappointment. It tasted like warm soy milk with a hint of asparagus. We added numerous ingredients to try to salvage it but it was barely edible. Very disappointing after such rave reviews.

Hot Artichoke and Spinach Dip II

This was great! I put all the ingredients in my food processor which made it really easy. I also sprinkled cayenne pepper on 1/2 the dish to add a little heat. Next time I'll add cayenne to the mixture before baking. Thanks for a great recipe!

Mushroom, Leek, Chicken Sausage and Tortellini Soup

I was pleasantly surprised by how much flavor was in this dish with such simple ingredients. I doubled the mushrooms and used Boca (meatless) italian sausages. Very good!

Creamy Italian White Bean Soup

I found the soup a bit bland until I added a heaping teaspoon of cumin and a couple dashes of cayenne. I also doubled the lemon juice. Next time I won't puree quite as much of the soup so it's a bit chunkier. Very good though!

Sausage Casserole

Very good! I made this for a football party and added 1 red pepper, 1 green pepper, and a cup of sliced mushrooms. Next time I'll cut the butter way down to reduce the fat. Oh and the shredded red potatoes were a cinch in the food processor! I didn't even peel them!

Dorsey's Fried Oysters

This fried oyster recipe is by far the best we've tried! I'm a HUGE oyster fan and try them everywhere I go and these top most of the restaurant versions I've had! We love that the breading is so light and crispy and it really couldn't be easier to make. We've used this recipe many times and the oysters always turn out fantastic. Thank you so much for such a wonderful recipe!

Shrimp Couscous Salad

Great summer dinner. I used salad shrimp because I didn't feel like cooking and peeling bigger shrimp and it turned out nicely. The only thing missing is lemon juice which I think is a must for this recipe. Great the next day for lunch too!
