Big Soft Ginger Cookies

Nothing spectacular about this cookie. I made it because it was in the top 20 and I had tremendous success with the cinnamon rolls. I had no problems making it, I just think the cookie is very plain. I think it must have gotten it's high rating from the ease of making and, possibly, people who just love ginger.

Chocolate Trifle

I had to double the recipe to get to the top of my trifle bowl. I figured I would have tons of leftovers but people were licking the bowl! I used fat free cool whip (couldn't find the vanilla this year) and low fat sweetened condensed milk to lessen the sweetness. I whip up 1/2 pt of heavy whipping cream and add that to the condensed milk/water/pudding mix instead of using cool whip. I also added skor bar bits and caramel sauce to every layer. It was a hit!

Burrito Pie

This came out great! I omitted the olives (hubbie doesn't like them,took the suggestions of other reviewers and made the following alterations- (1) Use 1/2 refried and 1/2 black beans (drained) (2) Add canned corn (drained) (3) Add taco seasoning to meat(don't add water) (4) Substitute salsa (I used 505 southwestern salsa w/ flame roasted New Mexican green chile) (5) Don't mix beans with meat (6) Layer refried beans, meat, black beans, cheese, corn, repeat (7) Fry tortillas b/f baking (no need to double layer if you do this) Serve with sour cream, cheese, avocado (opt), and salsa * wrap leftovers in new tortilla for lunch

Sesame Beef

Delicious! I took the advice of other reviewers and doubled the marinade and sesame seeds. I stir fried the meat in the sauce and I added 1/2 box of frozen broccoli along with the sesame seeds to the stir free for the last two minutes of cooking. Next time I'll add the whole box. Yum!

Sugar Free Rugelach

I admit, I have always turned up my nose at sugar-free dessert recipes. I made this for my diabetic father-in-law since he's diabetic and got rave reviews. He had to wrestle them away from his wife- who had eaten 10 before I left! Next time I might increase the filling a little. All in all, a delicious recipe.

Iced Tea III

Yummy! No changes needed. I accidently ripped one of the tea bags while stirring but, luckily found a tea strainer and all was well. Pitcher was gone within the day- and there are only 2 of us at home!

All Day Apple Butter

I had never made apple butter before and was very pleased with the results of this recipe. I decreased the recipe be half and chopped the apples (golden delicious) very fine in the food processor so I wouldn't have to deal with chunks later on. I only used 1 and 1/2 cups sugar. I increased the spices a little. I didn't have allspice, so used a substitution I found for it on another site with states 1/4 teaspoon ground cinnamon plus 1/2 teaspoon ground cloves plus 1/4 teaspoon ground nutmeg can be substituted for 1 teaspoon ground allspice. I will make this again, and only use 1 cup of sugar.

Slow Cooker Taco Soup

LOVED this! I drained the corn, added only 1/2 the can tomato sauce, and ranch seasoning packet. Came out delicious! We poured frito chips into bowls, then topped them with the taco soup/chili and sour cream, shredded cheddar, and frito chips. Leftovers are even better. My husband's coworkers requested he bring it again, and more of it a day after he brought it in his lunch.

Banana Nut Bread II

This ended up coming out pretty tasty, despite my mistake of overcooking by having judged the doneness of the bread by the appearance of it's top after it had been cooked ont rapid bake cycle (I didn't have a quick bake setting). I set it to bake for another hour in my machine. The top was still pale in color, but I checked for doneness with a knife. Came out clean so I decided to further inspect it by. Aaaah! There was my beautiful cinnamon color! It tasted very good too. I had added 1 tsp cinnamon and 1 tsp vanilla used 3 bananas. I think it would have come out more moist had I not cooked it the additional hour. Also, next time I will make sure to use overripe bananas.

Slow Cooker Barbeque

This was very good. I used KC Masterpiece Original BBQ sauce and a little bit of Baby Ray's when I ran out of KC. My husband loved it. It tasted pretty good to me too, though I didn't get my own sandwich because my husband hounded it. :o)

Slow-Cooker Pepper Steak

This recipe was alright after 5 hrs in the crockpot- delicious after 7. I made it in addition to fried rice and we had a fantastic dinner. My husband didn't stop picking at it until it was gone. He told me I would have to make it again next week so he can share with his coworkers.
