My Special Shrimp Scampi Florentine

Simply delicious...emphasis on the simple...I used thawed frozen just because of the cost. If you do that, just be sure to thaw and allow the excess liquid to drain or you will have a watery dish.

Eggplant Parmesan II

Don't know if this was a typo but I layered it with a little sauce at the bottom of the dish then added eggplant, sauce layer, cheese and then repeated. I left the peel on and cooked a bit longer. Leaving the peel on is more nutritious but it can cause bitterness if the eggplant isn't as fresh as it could be. Just an fyi.

Quick Catfish Fillets

Honey Mustard Grilled Chicken

It was raining so I couldn't grill. I baked them at 375 for about an hour (the pieces were very large so if you're using smaller pieces, bake for less time). I made extra marinade to pour over finished chicken. I used Dale's steak marinade rather than steak sauce.

Eggplant Parmesan I

Useful info from this site regarding prepping eggplant: If you choose to salt your eggplant, first slice or cube it, and then salt generously, allowing the fruit to sit in a colander for at least an hour, preferably longer. Salted eggplant can sit purging for hours without harming the taste or texture. BUT...before cooking the eggplant, be sure to rinse the salt off well. THEN place the slices between sheets of paper towel and press gently to remove juices and firm the flesh. This is particularly important when frying your eggplant slices or cubes.

Maple Salmon

Really easy and delicious recipe. I marinated the salmon for 2 hours turning it about every 30 min. Set some marinade aside for basting or dunking. Also a yummy marinade for chicken...cook at 375 for approx. 40 minutes. Really good.

Campbell's® Healthy Request® Green Bean Casserole

Great recipe using fresh green beans as opposed to all the ones calling for canned. I added (and balanced it into the recipe) fresh mushrooms. Added more soup and about 1/2 cup of fresh onion instead of onion powder. If you like you veggies crunchy...use the cook time specified. Otherwise, consider cooking it longer before adding the fried onions (stir more often to keep from burning).

Simply delicious ... make sure you use some quality corn to begin with. The recipe was spot on right up to timing ... 8 minutes and put the corn in AFTER the water boils.

Garlic Chicken

I use a bit more of the ingredients that called for...just makes it easier. I warm the garlic in the oil and add fresh basil from my garden. I also poke some holes to infuse the garlic and oil into the chicken. The temp and timing works great! YUM...very much a favorite at my house.

To-Die-For Chicken Pot Pie

Great recipe. I used a 3" deep casserole dish and doubled the pie crust. Also did not use water...cooked all in low-sodium chicken broth. If you do this, be careful how much extra salt you add. Also used 2 packages of chicken gravy and 2 mushroom gravy and added some mushrooms rather than the corn. Lastly I only cooked it for about 30min or the crust would have burned. Since all is cooked going in, the only reason it goes in the oven is to bake the piecrust. YUM!!!

Bada Bing Bada Banged Potatoes

Amazingly good potatoes. Be careful not to smash them too far. It's easy to do that if they are still firm as the recipe calls for before smashing. I did not use the oregano, basil or parmesan just because of what I was making with them but this is a really fine recipe that could easily be amended with different herbs and cheeses. Heck even bacon bits or bits of onion would be really good.

Roasted Garlic Sweet Potatoes

A good beginning however we felt the cream cheese (and to an extent the sour cream) was overpowering. It was difficult to taste the sweet potato. Were I to make this again I would make these more along the lines of regular garlic mashed potatoes...we'd not use the cream cheese or sour cream and instead would use heavy cream or even buttermilk. The cayenne was a good touch so we'd keep that.

Brigid's Blackberry Pie

LOVED this pie. Versatile to be used with any fruit. FYI...ALWAYS use fresh fruit in pies to prevent "runny" pies. I did cut the amount of sugar in half, added 1/4 tsp. nutmeg and 1 tsp. cinnamon. Brushed on some egg white to the bottom before loading in the fruit and brushed the top of the pie and sprinkled it with white sugar.
