Perfect Fried Green Tomatoes

For those needing "cajun seasoning" for the dipping sauce but don't have it premixed... put together 1 tablespoon dried oregano,1 tablespoon paprika, 1 tablespoon cayenne pepper and 1 tablespoon ground black pepper and use 1-2 tablespoons of this in 1/2 cup of Ranch Dressing depending on how spicey you like your dipping sauce. Use caution if you don't like spicey-ness.

Irresistible Irish Soda Bread

Wow! This was fantastic. All I did was decrease the sugar EVER so slightly so it had just a hint of sweetness. Read a tip that proved quite good. After putting the batter into the pan, let it sit for 30 min. before placing in the oven to allow the chemical reactions to occur. Wrap in foil as directed. Moist, flavorful and amazing!

Guacamole

If you're wondering if you chop the stems of the cilantro...you do not. Use the leaves. This recipe is fabulous. You can also swap lemon for lime but don't use a huge lemon and don't use as much lemon juice as you would lime. Lime is a little sweeter than lemon.

Sweet Potato Cookies II

While not the sweetest of cookies I thought they were good. Based on reviews this recipe needs tweaking depending on your tastes. Mine...I added 1 tspn vanilla and 1 tspn cinnamon, used equal parts baking powder and soda (1/2 tspn ea.), used brown instead of white sugar. Lastly I cooked them a bit longer than the called for 7 min. These do not flatten so I flattened the balls just a hair after placing on the baking sheet (USE PARCHMENT PAPER) and sprinkled with granulated sugar when I look them out of the over.

Sweet Potato Pie I

This is great pie...used about 3 cups of mashed sweet potato, buttermilk instead of reg. milk, added 1 tablespoon of all-purpose flour to thicken it a bit and reduced the sugar to about 3/4 cup. Made a dense pie which for me is preferable over a "whipped" kind of pie.

Simply delicious...emphasis on the simple...I used thawed frozen just because of the cost. If you do that, just be sure to thaw and allow the excess liquid to drain or you will have a watery dish.

Eggplant Parmesan II

Don't know if this was a typo but I layered it with a little sauce at the bottom of the dish then added eggplant, sauce layer, cheese and then repeated. I left the peel on and cooked a bit longer. Leaving the peel on is more nutritious but it can cause bitterness if the eggplant isn't as fresh as it could be. Just an fyi.

Honey Mustard Grilled Chicken

It was raining so I couldn't grill. I baked them at 375 for about an hour (the pieces were very large so if you're using smaller pieces, bake for less time). I made extra marinade to pour over finished chicken. I used Dale's steak marinade rather than steak sauce.

Eggplant Parmesan I

Useful info from this site regarding prepping eggplant: If you choose to salt your eggplant, first slice or cube it, and then salt generously, allowing the fruit to sit in a colander for at least an hour, preferably longer. Salted eggplant can sit purging for hours without harming the taste or texture. BUT...before cooking the eggplant, be sure to rinse the salt off well. THEN place the slices between sheets of paper towel and press gently to remove juices and firm the flesh. This is particularly important when frying your eggplant slices or cubes.

Maple Salmon

Really easy and delicious recipe. I marinated the salmon for 2 hours turning it about every 30 min. Set some marinade aside for basting or dunking. Also a yummy marinade for chicken...cook at 375 for approx. 40 minutes. Really good.

Campbell's® Healthy Request® Green Bean Casserole

Great recipe using fresh green beans as opposed to all the ones calling for canned. I added (and balanced it into the recipe) fresh mushrooms. Added more soup and about 1/2 cup of fresh onion instead of onion powder. If you like you veggies crunchy...use the cook time specified. Otherwise, consider cooking it longer before adding the fried onions (stir more often to keep from burning).

Simply delicious ... make sure you use some quality corn to begin with. The recipe was spot on right up to timing ... 8 minutes and put the corn in AFTER the water boils.
