Oatmeal Peanut Butter Cookies III

Oh my goodness these are delicious! I have never tried the GS cookies but I made them last night and brought them to work and many people say they taste just like them...and the whole batch was wiped out by 8:30 am! I reduced the sugar in the cookies to 1/3 c. each white and brown sugar because another reviewer remarked that they were a little sweet. Too late, I realized I had only "old-fashioned" oats rather than "quick cooking" but the texture was great, crispy but chewy. I didn't even bother pressing them down with a fork...I just used my fingertips to "tamp" down the cookies and give them uniform round edges. Just about everyone asked for the recipe. DO make a double-batch. I didn't and wish I had. Thanks Joanne! You are a genius!

Buffalo Chicken Rolls

This was a great recipe. I used the sauce from Restaurant Style Buffalo wings and since I hate pounding chicken, I just cut a slit in each breast and stuffed the cheese in the pocket. Next time, I think that I'll use gorgonzola or bleu cheese rather than provolone. Thanks D & S Parker!

Restaurant-Style Buffalo Chicken Wings

I used this sauce for the AR recipe Buffalo Chicken rolls since I didn't have wings on hand. I doubled the hot sauce (Frank's) and marinated for about 45 minutes but next time I'll marinate it even longer. For those who want a milder taste, I think that the recommended 1/4 c. would be fine. Can't wait to try it with wings. Thanks Kelly!

Green Chili Stew

I used pork loin as I think it goes so well with green chile. Like others, I made this in my slow cooker so I omitted the oil. I used 14 oz frozen green chile (with liquid) so I reduced the broth to 1/4 c. I didn't add tomatoes or potatoes for dietary reasons, but did add about two cloves minced garlic. This is very similar to the way I usually make my green chile meat, but I usually don't add cumin. I'll definitely be adding it from now on. Thanks Lynn!

Country Fried Steak and Milk Gravy

Mmmm...I used pork cube steaks as I had those (I'd never tried them before) but used only about 3 tbsp. of flour (low-carb) after dipping in the egg. The crust actually turned out pretty of good. For the gravy, I sauteed about 2 tbsp. finely chopped onion, about 1 tbsp. of flour and used cream instead of milk. I have, however, decided that I prefer the beef over the pork cube steaks. Jalapeno-Garlic-Onion Cheeseburgers

These were great! I used cheddar as I didn't have pepper jack which I bet would be fantastic. I nixed the buns and ate with a fork. Very satistfying. Thanks Steve!

Habanero Pepper Cream Pasta

Travis, you are my hero! This was divine! I actually just made the sauce and served it over chicken. I used jalapeno instead of habanero, and added about 1/2 c. salsa instead of tomato. It was so good I wanted to eat it with a spoon! Thanks for the post!

Doggie Biscuits I

It's so hard to rate a recipe when I'm not the one eating it! However, from my pooch's reaction, this is a 5*! He has kidney problems so I substituted ground veggies for the eggs and redueced the pb to 2 tbsp. He loved them. Thanks Dani!

Hamburger Gravy

Suffering from withdrawal on my low-carb diet and craving starchy food, I came across this recipe. I modified is so I wasn't cheating so much that I was riddled with guilt. I used only 1 tbsp. of flour, which worked well with the two cups of half and half (slightly less carbs than milk), omitted the onion and used about 1 tsp. of onion powder, 1/4 tsp. garlic powder and a dash of paprika. Served over steamed cauliflower, I *almost* felt like I was eating Mom's hamburger gravy over potatoes. Thanks Steven!

Super Scrambled Eggs Number One

Perfect for my low-carb diet. I didn't use any butter for the eggs, I just drained the majority of the bacon grease and cooked the eggs in that. I didn't add salt due to the salt content in the cheese and bacon. I even made these the night before and they were yummy this morning. Thanks for the recipe!

Easy Marinated Vegetables

Yum! I used only broc & cauliflower as I'm low-carbing. I used Good Seasons w/red wine vinegar and olive oil. I also added diced muenster cheese (others had suggested mozzerella but I didn't have any on hand). I let it marinate several hours and it was fantastic. I can't wait to try it tomorrow for lunch. Chicken Noodle Soup II

This is so good...perfect for someone needing a little comfort. I made my own chicken broth seasoned with poultry seasoning and parsley, and simmered the chicken breast for about 30 minutes. I omitted the corn as I'm not a big fan of it. I cut my noodles in dumpling squares rather than strips. Thanks LaDonna!

Pork Fried Rice for Two

I had a serious craving for fried rice and this recipe did not disappoint! I doubled the recipe and am glad that I did. I marinated the pork in the Chinese Five Spice, about 1/4 c. brown sugar, a splash of soy and a about 2 tbsp. rice vinegar for about 45 min. I used green peas instead of broccoli and added egg. I love the fennel seed in this recipe and my house smelled wonderful while I was cooking. Thank you Laura!

Scrambled Eggs Done Right

Yum! The mayo added a really nice flavor. I didn't add any butter, just used a non-stick cooking spray and the eggs were great. I added lots of black pepper and that was all they needed. Thanks WHATSHISFACE!

Whipped Shortbread Cookies

These little cookies are gems! I followed the recipe except I added about 1 1/2 tsp. of vanilla extract,2/3 c. finely chopped pecans, and, like other viewers, dipped them in chocolate. Mine didn't fall flat as others did, but I inverted my cookie sheets and baked them on the other side so I don't know if that helped. I think that next time, I'll skip the chocolate because they detracted from the wonderful flavor, but I think that the pecans were a nice addition. Thank you William!

Zippy Shepherd's Pie

DO NOT, I repeat, DO NOT omit the curry powder! The flavor is subtle but does so much for this recipe. In making this, I didn't use any oil and didn't need to even though I used lean ground beef (I actually even drained it after browning). I sprinkled the ground beef with flour while browning rather than using cornstarch. I added chopped celery to the beef and used seasoned instant potatoes to save some time. The pie turned out great and the leftovers are even better! Thank you Laura for the best shepherd's pie I've ever had!

Hot Cheesy Spinach Dip

This is heavenly! As suggested, I added some artichokes and 1/2 c. parm in lieu of 1/2 c. of the mozzarella. Also, I chopped the spinach up a bit before wilting. Everyone loved it, including my sister-in-law's (supposedly arthritic) dog who jumped up on the table and started munching! Luckily I have more of the ingredients so I can make another batch! Pumpkin Cheesecake

Yum! I added an extra 8 oz. cream cheese, increased the sugar to 1 1/3 c. & added an extra egg (I like SINFULLY rich cheesecakes!) I baked mine for about an hour and 10 minutes since there was extra batter and I cut the sour cream mixture in half (two cups seemed like a LOT) I took this to work with me today and everyone loved it. Nice easy recipe and very delicious. Thanks Evonne!
