Oven-Roasted Potatoes

Korean BBQ Short Ribs (Gal-Bi)

This was excellent! I marinated for about 36 hours and followed the recipe, except I slow baked mine in the oven and then placed the ribs under the broiler to crisp up. The flavor was divine! Thanks for the post!

Cream Of Green Chile Soup

Utterly fabulous. I added chicken, so I used the chicken broth from that for the soup. I added lots of extra green chile (hot)and used evaporated milk in place of the cream. The consistency, for me, was perfect, with a nice creamy taste, but a brothier (though slightly thick and smooth texture). I took some of this to share with co-workers and everyone raved! Those that cook asked for the recipe, and those who don't cook asked me to bring it again! Thank you Holly! This recipe ROCKS!

Green Chile Chicken Stew

I wanted a change from my usual pork and green chile stew, and this was fabulous! I added extra green chile, and made the recipe more brothy by adding additional water. I used pasta instead of potatoes, just because I was wanting a more spicy, soupy meal. It was delicious! Thanks for the post, Georgette!

Fettuccine Alfredo IV

This is really good and really simple. I used half & half instead of cream, and used fresh garlic. Make sure you add the parm slowly so it has a chance to melt. Thanks for a great recipe, Gail!

Baked French Fries II

I love this recipe. It is so easy, so flavorful and so much healthier than traditional French fries. I didn't change a thing, but I was very generous with the pepper because of personal preference. The parmesan was a nice touch. Thank you Fred!

Savory Garlic Marinated Steaks

This was FABULOUS! I am forever in search of great marinades and this was by far one of the best that I have tried from this site. I used reduced sodium soy sauce, didn't add any salt and used brown sugar instead of honey. I marinated this for about 26 hours. Next time, I'll probably marinate my steaks for longer to get more of the fabulous flavor from the marinade. No steak sauce needed with this steak! Thank you Angie!

Pesto Sauce

Yum, yum, & yum! I added a little extra garlic because I can't seem to get enough of it. I'm sure that it freezes well, but none of it made it to my freezer! This was very flavorful and easy and so much better than store bought! Thanks Sue!

Mom's Best Meatloaf

I really enjoyed this. I sauteed the onions (adding a clove of minced garlic at the end), reduced the bread crumbs to 1/2 c. and used balsamic vinegar. It was very satisfying and flavorful. Thank you Carolyn!

Absolute Mexican Cornbread

I made this for a work luncheon and everyone loved this! Like others, I reduced both the butter and the sugar down to about 1/3 of a cup each. I used 2/3 c. hot green chile (frozen & defrosted) and used only cheddar as I didn't have Monterey Jack on hand and used homemade cream corn (Gulliver's Cream Corn). They were moist, slightly sweet, and were perfect with the cheese and chile! These definitely make more than 6 servings though! I probably cut mine into about 16 squares. Thanks Judy!

Gulliver's Cream Corn

Wow! I didn't think I liked cream corn. Turns out I just don't like canned cream corn. I was in a bind when I realized that the Absolute Mexican Cornbread called for cream corn and I didn't have it...since I thought that I didn't like it. I made this with fat-free half and half and I omitted the MSG. This was really good. I will even be making this as a side dish, now, and not just for use in another recipe. Also, as a sidenote for those of you who do like canned cream corn, this is much better and so easy! Thanks EQUESS3N!

Potato and Cheddar Soup

This was very tasty! I used scallions rather than onions, which I sauteed with some diced celery and minced garlic until soft. I used smoked sausage in lieu of ham and added plenty of black pepper. This was a rich, hearty and satisfying soup! Thank you Debbie!

Tangy Chicken Breasts

Like others, I reduced the recipe to just 1/3 of a c. of each liquid, and used fresh garlic. The chicken turned out tangy, as promised. Very flavorful. I sliced the chicken and used it to top a green salad. Thanks DuChareau!

I tried these and I absolutely loved them! I personally don't mind a recipe that takes a little time, especially if it's authentic, but maybe if you don't truly enjoy cooking, you may want to stick with some simpler recipes that require less cooking experience. Definitely worth the time and effort. Thank you Linda! It's a very special recipe and I know that I'll try it again!

Potato Salad I

I used a 3 lb. bag of potatoes, so reduced the ingredients accordingly. I used only about 3 baby dills as I don't care for sweet pickles, and added a little sprinkle of dill along with a splash of the dill pickle juice. Absolutely fantastic! Thank you Ellen!

Mouse's Macaroni and Cheese

I, being the cheese lover that I am, didn't think that this was too cheesy! I thought that it was fabulous! I added some onion and garlic powder and a dash of hot sauce to the cheese mixture. I used cheddar only and just sprinkled the top with bread crumbs. Very good Mouse! Thank you!

Pasta with Tomato Cream Sauce

I really enjoyed this. I made my own red sauce to which I added cooked Italian sausage, crumbled and drained. This is a very comforting recipe. I might add some finely chopped bell pepper the next time around, or maybe sprinkle it with capers. Thanks Brenda!

Bill's Sausage Gravy

This was fantastic! I doubled the recipe since I was making it for a breakfast potluck at work. I added some onion powder to the sausage, along with pepper and salt. I wasn't planning on adding butter, but the sausage didn't render much fat, so I added about 5 tbsp. for the double batch. Everyone at work loved it (it was the favorite dish). Plenty of black pepper is a must, I think, but I like pepper. Thanks, Bill!
