About this Cook
A full time Accountant (AP Dept.) and a single mother of a hyper 11 year old boy. I do however have a boyfriend who I've been with for about 5 1/2 years now. I dont believe in medicating a child, however I believe in a great diet to help balance out energy, motivation, and attitude. I still have yet to be consistent...

Mexican dishes(I still have yet to find the perfect tasty red enchilladas) Easy Vegetarian dishes Simple Kid's dishes experimenting and proving to myself I can make food that you find at your fave restaurants
My favorite family cooking traditions
haven't figured those ones out yet. My mother doesnt celebrate holidays per her religion, which I respect very much. My father who is a catholic but doesnt care about church. My siblings who dont care about tradition except for Super Bowl Sunday. har har har
My cooking triumphs
I was second place in my Vegetarian Cuisine Class finale, with a kick @ss Ground Beef Stew. yes I used fake meat. =)
My cooking tragedies
I take too much time on chopping, I've put too much spice in a chili, soup, or anything. I dont know how to fry onions without burning them to blackness. =(

Spinach and Mushroom Egg Casserole
I made this ...the only change I did was saute the baby bella packaged mushrooms with garlic, onions, and olive oil...I sliced the onions finely though....and added fresh spinach and put it to the side until it was ready to mix into the egg mixture...it was in the oven for 40 mins or until I did the knife test... it turned out delicious. i appreciate this recipe..Thank you!

Vegetarian Meatloaf with Vegetables
I tried this recipe and it turned out great! However instead of using the spices I tried a packet of meatloaf seasoning...=\ I didnt find veg. worcestershire sauce...or sage..next time I want to try this again with the original seasonings.
